Yield 24 small crab cakes

Number Of Ingredients 9

2 cups backfin crab meat (about 3/4 pound), picked over
1 cup fresh bread crumbs
2 large eggs
1/2 cup heavy cream
a dash of hot sauce, or to taste
2 teaspoons Worcestershire sauce
2 teaspoons chopped fresh parsley leaves
2 teaspoons grated onion
2 tablespoons unsalted butter

Steps:

  • In a bowl, combine crab meat and bread crumbs. In a small bowl, whisk eggs well and add cream, whisking. Add cream mixture, hot sauce, Worcestershire sauce, parsley, onion and salt and pepper to taste to crab mixture and combine well.
  • In a large heavy skillet, heat 1 tablespoon butter over moderate heat until foam subsides and into it drop half of crab mixture by tablespoons. Cook crab cakes until golden brown, about 2 minutes, on each side, and repeat with remaining tablespoon butter and crab mixture. Serve crab cakes warm.

Tips:

  • Use fresh crab meat. Fresh crab meat has a sweeter, more delicate flavor than canned or frozen crab meat. If you can't find fresh crab meat, you can use canned or frozen crab meat, but be sure to drain it well before using.
  • Don't overmix the crab cakes. Overmixing the crab cakes will make them tough. Gently mix the ingredients until just combined.
  • Cook the crab cakes over medium heat. Cooking the crab cakes over medium heat will help them cook evenly without burning.
  • Don't overcrowd the pan. When cooking the crab cakes, don't overcrowd the pan. This will help them cook evenly.
  • Serve the crab cakes with your favorite dipping sauce. Crab cakes can be served with a variety of dipping sauces, such as tartar sauce, cocktail sauce, or remoulade.

Conclusion:

Crab cakes are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. They are easy to make and can be customized to your liking. Whether you like them simple or loaded with ingredients, there is a crab cake recipe out there for everyone.
