600g minced beef (I used 12% fat mince)
1 egg, beaten
2 beef stock cubes, crumbled (I use OXO)
1 onion, finely chopped
100g panko bread crumbs
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 handful chopped parsley
Salt and freshly ground pepper
1 tsp brown sugar
1 tsp mustard (I used English mustard)
2 tsp honey

Steps:

  • Pre-heat the oven to 180C.
  • Mix all the ingredients together in a bowl by hand. Make sure everything is well mixed.
  • Form the ingredients tightly into a loaf shape and place in a loaf tin on some baking parchment.
  • Mix the brown sugar, mustard and honey together and brush onto the top of the meatloaf.
  • Cook in the middle shelf of the oven for 50-60 minutes or until well cooked.

Steps:

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. Crumble beef and pork over mixture and mix well. Shape into a loaf; place in a greased 11x7-in. baking dish., Bake, uncovered, at 350° for 1 hour. Combine ketchup and brown sugar; spread half of sauce over meat loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with remaining sauce. Freeze option: Bake meat loaf without sauce. Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf and place in a greased shallow baking pan. Prepare sauce as directed; spread half of sauce over meat loaf. 1 teaspoon ground mustard

2 lb ground beef
1/2 c grated sweet onion
1 slice white bread, torn into small pieces
2 large eggs
1/2 c whole milk
1 pkg Au Jus gravy mix
1/4 c ketchup
1 Tbsp Worcestershire sauce
1 Tbsp parsley flakes
1 tsp garlic powder
1 tsp salt
1/4 tsp black pepper
SAUCE
3/4 c ketchup
1/4 c brown sugar
1 Tbsp apple cider vinegar
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper

Steps:

  • 1. Preheat the oven to 375 degrees. Cut the chill on the ground beef by setting it in a bowl for about 20 minutes.
  • 2. Grate the onion and break the bread into little pieces.
  • 3. Put the onion and the bread pieces in the bowl with the ground beef. Add the rest of the meatloaf ingredients: eggs, milk, Au jus packet, ketchup, Worcestershire sauce, parsley flakes, garlic powder, salt, and pepper. Gently mix with your hands or a spoon until combined. Don't overmix.
