SUPER TENDER ITALIAN MEATBALLS

Super Tender Italian Meatballs image

Super Tender Italian Meatballs. Loaded with Parmesan cheese, fresh parsley and garlic. They melt in your mouth and are incredibly tender. Takes less than 30 minutes to make!

Provided by Kelley Simmons

Categories     Main Course

Time 30m

Number Of Ingredients 15

1/2 cup milk
1/2 tablespoon lemon juice
1 1/2 cups bread (cubed (I used a day old baguette))
1 tablespoon extra virgin olive oil
3 tablespoons onion (diced)
2 cloves garlic (minced)
1 pound ground beef
1/2 pound ground pork
1 cup Parmesan cheese (grated)
2 eggs
1 tablespoon parsley (chopped)
1/4 teaspoon red pepper flakes
1/4 teaspoon pepper
1/8 teaspoon salt
Slow Cooker Tomato Sauce

Steps:

  • Preheat oven to 350 degrees.
  • Combine milk and lemon juice in a small bowl. Let stand for 5 minutes. You will see curds at the top.
  • Add bread to a small bowl and pour the buttermilk over the bread. Allow the bread to soak up all the milk and mix a little with your hands. Add the bread mixture to a large bowl.
  • Meanwhile add olive oil to a small skillet. Add in onion and sauté until tender about 2-3 minutes.
  • Add in garlic and sauté for one minute.
  • Add onion and garlic to the bowl with the bread along with the beef, pork, cheese, eggs, parsley, red pepper flakes, salt and pepper.
  • Combine the mixture using your hands just until combined. Try not to over work the meatballs. The mixture will be wet. Let stand for a couple of minutes before rolling.
  • Roll out 16 meatballs. I make them the size of golf balls.
  • Drizzle a skillet with olive oil. Over high heat sear the meatballs on all sides to brown. About 1-2 minutes on each side. (If meatball sticks to the pan give it more time before flipping). Also be careful when flipping meatballs they are pretty fragile.
  • Place meatballs on a baking sheet and cook for 10 minutes. They will be slightly undercooked on the inside but they will continue to cook as they come out of the oven. If this is an issue leave in the oven for longer (5 minutes) or simmer in tomato sauce for a few minutes.
  • Serve the meatballs immediately with your favorite tomato sauce and pasta.

BEST EVER ITALIAN MEATBALLS

Best Ever Italian Meatballs image

This is a recipe I was given from a lady from Italy. She told me that the secret of mouth watering meatballs is not to cook them before adding them to the sauce, as cooking them in the sauce will not only add more flavor to the sauce, but also to the meatballs. What I do is make these a day ahead of time, with my sauce. Then, I refrigerate it over-night, which makes any fat rise to the top and harden, where it is easily removed. This process also allows all of the flavors to "marry" together, making it especially delicious!

Categories     Meatballs

Time 1h55m

Yield 16 Meatballs

Number Of Ingredients 16

1 lb lean ground beef
1/2 lb ground pork
2 large eggs
1 cup onion, finely chopped
4 garlic cloves, minced
1/2 cup bell pepper, finely chopped
3/4 cup fresh parmesan cheese, grated
1/3 cup Italian breadcrumbs
1 1/2 teaspoons salt
1 teaspoon cayenne pepper
1/4 cup milk
1 tablespoon Worcestershire sauce
1 1/2 teaspoons fresh oregano, chopped
1 teaspoon fresh basil, chopped
1/4 cup fresh parsley, chopped
2 teaspoons anise seeds (optional)

Steps:

  • Mix all ingredients together in a large bowl.
  • Shape into small meatballs.
  • Drop the meatballs into simmering sauce. It is important not to stir the sauce for at least 25 minutes. This will allow the meatballs to firm up enough as not to break up in the sauce. Make sure your burner is low enough so that your sauce does not scorch during this process.
  • Continue simmering until sauce reaches desired consistency and meatballs are cooked through.

Tips:

  • Use a combination of ground beef and ground pork. This will give the meatballs a more flavorful and moist texture.
  • Soak the bread crumbs in milk before adding them to the meatball mixture. This will help to bind the meatballs together and prevent them from becoming dry.
  • Grate the Parmesan cheese finely. This will help it to distribute evenly throughout the meatball mixture.
  • Don't overmix the meatball mixture. Overmixing can make the meatballs tough.
  • Use a large spoon or ice cream scoop to form the meatballs. This will help to ensure that they are all the same size and shape.
  • Brown the meatballs in a skillet over medium heat before adding them to the sauce. This will help to seal in the juices and prevent them from becoming dry.
  • Simmer the meatballs in the sauce for at least 30 minutes. This will help to develop the flavor and tenderize the meatballs.
  • Serve the meatballs with your favorite pasta, rice, or bread.

Conclusion:

These super moist Italian meatballs are a delicious and easy-to-make dish that is perfect for any occasion. They are perfect for a weeknight meal, a party, or a potluck. With just a few simple ingredients, you can create a dish that your family and friends will love.
