1 small onion, chopped
1 clove garlic, minced
2 small zucchini, cubed
1 teaspoon tomato paste
1 beefsteak tomato, cubed
1 teaspoon herbes de Provence, or more to taste
salt and freshly ground black pepper to taste
1 pinch white sugar
1 tablespoon chopped fresh basil leaves, or to taste

Steps:

  • Heat olive oil in a large skillet and cook onion until soft and translucent, about 5 minutes. Add garlic and cook for 30 seconds. Add zucchini and cook until softened, about 3 minutes. 2 medium zucchinis
1 tablespoon olive oil
1/2 teaspoon sesame oil
3 teaspoons toasted sesame seeds
2 tablespoons parmesan cheese from shaker
1 teaspoon garlic salt
1/4 teaspoon cayenne pepper

Steps:

  • 1. Wash and trim the zucchini, peeling about half of a zucchini and leaving the rest of the peeling on. Slice the zucchini in half lengthwise into two pieces, then slice each half again. Now take each of the four pieces and cut into 1/2 inch slices. Make as uniform as possible. Prepare the second zucchini the same way.
  • 2. Take a ziplock bag and put the oils, sesame seeds, cheese, and spices in it, add the zucchini slices. Press the air out of the bag , close it, and knead the zucchini and the oil mixture until all the zucchini slices are covered evenly.
  • 3. Pre-heat oven to 400 degrees. Prepare a cookie sheet with parchment paper. Don't grease it. Spread the zucchini in a single layer on the parchment paper.
  • 4. Bake the zucchini in the oven for about 20 minutes. The time will depend on your oven, climate and personal preference on how done you want it. After 15 minutes, check every two minutes until it is to your liking. Serve immediately.

2 tablespoons butter
1/2 cup vidalia onion (sliced or diced)
1 zucchini (medium sized)
3 tablespoons dill weed (freeze dried or fresh)
1 dash salt (to taste)
1 dash black pepper (to taste)

Steps:

  • Slice up zucchini cross wise in thin slices about 1/8" thick.(Does not have to be precise). Set aside.
  • In skillet on medium low heat, add 1 tablespoon butter and saute onion, stirring frequently until tender about 3-5 minutes.
  • Add zucchini stirring frequently to lightly saute for 2 minutes.
  • Add 1 tablespoon butter and then sprinkle dill weed. Stir the dill evenly throughout.
