3 tablespoons brown sugar
3 tablespoons paprika
1 ½ tablespoons garlic powder (such as McCormick® California Style)
1 ½ tablespoons ground black pepper
1 ½ teaspoons salt
½ cup Dijon mustard (such as Hellmann's®)
8 pounds pork shoulder roast (butt roast), rind removed
½ cup barbeque sauce, or to taste
18 large hamburger buns, split

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix brown sugar, paprika, garlic powder, black pepper, and salt in a bowl. Spread mustard over pork roast and sprinkle with brown sugar mixture, using the entire amount. Line a shallow baking dish with aluminum foil. Place a rack in the prepared baking dish and arrange pork roast on rack.

3/4 c ketchup, divided
1 Tbsp light brown sugar
5 cloves of garlic, pressed
1 tsp liquid smoke flavoring
1 teaspoon each, salt and pepper
3 lb boneless pork shoulder, remove excess fat
i have used a larger pork shoulder with a bone, and cooked it bone in.

Steps:

  • 1. In a 5 quart crock pot, mix 1/2 cup of ketchup, sugar, garlic, liquid smoke, salt and pepper.
  • 2. Cut pork lengthwise, add to crock pot, turning pork to coat with ketchup mixture.
  • 3. Cover crock pot, and cook on low for 8 hours. Meat will be very tender and falling apart.
  • 4. Carefully remove pork from the crock pot, and place in a large bowl. Use 2 forks to shred the meat apart.
  • 5. Skim unwanted fat from the juices in the crock pot. Add remaining 1/4 cup of ketchup, and mix well. Pour over shredded pork.
  • 6. Serve on your favorite crusty rolls! This is really tasty! Enjoy!
