This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

Time 30m

Yield 2 serving(s)

Number Of Ingredients 7

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

Tips and Conclusion

To ensure your chicken parmesan turns out perfectly, follow these tips:

  • Use a good quality, thick cut chicken breast. This will help the chicken stay juicy and flavorful.
  • Pound the chicken breasts to an even thickness. This will help them cook evenly.
  • Season the chicken breasts with salt, pepper, and garlic powder. This will give them a nice flavor.
  • Coat the chicken breasts in flour, then eggs, then breadcrumbs. This will help them get crispy.
  • Pan-fry the chicken breasts until they are golden brown and cooked through. This will take about 3-4 minutes per side.
  • Transfer the chicken breasts to a baking dish and top with marinara sauce and mozzarella cheese. Parmesan cheese is also usually used.
  • Bake the chicken breasts in a preheated oven until the cheese is melted and bubbly. This will take about 10-15 minutes.
  • Serve the chicken parmesan with your favorite sides, such as spaghetti, mashed potatoes, or salad.
