SERIOUS POTATO SKINS

Serious Potato Skins image

There's no trick to these loaded potato skins, and making them is a breeze. Pile them high with toppings and broil until they look like something you may have eaten at an Irish bar in the bad part of town during college, the game playing on a big screen above the bathroom doors. That bar was pretty good, you know.

Time 1h30m

Yield Serves 4

Number Of Ingredients 9

4 Idaho baking potatoes
Extra-virgin olive oil
8 ounces thick-cut bacon, diced
6 ounces cheddar cheese
1 bunch scallions
Kosher salt
freshly ground black pepper
1 cup sour cream
Hot sauce, to taste

Steps:

  • Preheat the oven to 400 degrees. Rub the potatoes lightly with olive oil and bake them on a foil-lined baking sheet until their skins are crisp and a fork easily slides into their flesh, about 1 hour. Transfer the potatoes to a wire rack and let cool for 10 minutes.
  • While the potatoes are cooking, assemble the toppings. Cook the bacon in a large skillet over medium heat until crisp, then transfer to a small bowl. Reserve the bacon fat. Grate the cheese into a small bowl; you should have about 2 cups. Trim and thinly slice the scallions. (Feeling frisky? Caramelize some onions. Shred some ham or grate some Gruyère.)
  • Using an oven mitt or a folded kitchen towel to handle the hot potatoes, cut each into quarters lengthwise to create four wedges. Using a small spoon, scoop the flesh from each wedge, leaving 1/4 inch or more of the flesh. (Save the scooped potatoes for another use, like potato pancakes or soup.)
  • Set the oven to broil. Return the wedges to the foil-lined baking sheet. Paint a bit of bacon fat on each, then top with cheese and bacon. Place under the broiler until the cheese is bubbling. Place the skins on a serving plate. Season with salt and pepper. Spoon a teaspoon or so of sour cream on each and scatter the scallions over the plate. Serve with hot sauce.

SUPER BOWL WEDGE

Super Bowl Wedge image

This is an oldie but goodie that I used to serve on Super Bowl Sunday during the 80's! Although, in order to post this, I had to be specific with ingredient amounts, it really is up to your personal taste and is more a template to follow to create your ideal wedge.

Time 40m

Yield 6 serving(s)

Number Of Ingredients 7

1 loaf Italian bread
1/2 cup olive oil
3/4 lb cold cuts (your choice)
1/4 lb mozzarella cheese or 1/4 lb provolone cheese
1 whole roasted red pepper, cut in strips
1 medium red onion, sliced thinly in rings
1 teaspoon oregano

Steps:

  • Slice a long loaf of Italian bread horizontally. Cut sides of the bread are sprinkled very lightly with good olive oil.
  • Then begin layering the deli foods of your choice: ham, Genoa salami, pepperoni for slicing, mozzarella cheese, roasted peppers, red onion rings, sprinkling every other layer with olive oil and oregano.
  • When layering is complete, the loaf is wrapped tightly in heavy-duty aluminum foil. (This much can be done ahead of time.).
  • Bake in a preheated 350 degree oven until hot, about 30 minutes. Slice into individual servings and enjoy!

Tips:

  • Choose the right lettuce: Iceberg lettuce is the classic choice for wedge salads, but you can also use romaine or butterhead lettuce. Just make sure the lettuce is crisp and fresh.
  • Make a flavorful dressing: The dressing is what really makes a wedge salad special. There are many different recipes for wedge salad dressing, but some common ingredients include blue cheese, mayonnaise, sour cream, and buttermilk. You can also add herbs, spices, and other flavorings to your dressing to taste.
  • Don't skimp on the toppings: Wedge salads are typically topped with bacon, blue cheese crumbles, tomatoes, and green onions. You can also add other toppings, such as croutons, hard-boiled eggs, or avocado.
  • Serve the salad chilled: Wedge salads are best served chilled. This will help the dressing to stay cold and creamy, and it will also make the salad more refreshing.

Conclusion:

Wedge salads are a classic American dish that is perfect for any occasion. They are easy to make, delicious, and can be tailored to your own taste. So next time you are looking for a quick and easy meal, give wedge salad a try. You won't be disappointed.
