1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

4 flour tortillas
1 15 oz. can of low sodium chicken broth
1 15 oz. can of drained and rinsed Black Beans
½ cup of chopped onion
1 cup of chopped tomatoes
1 finely chopped jalapeño pepper (opt.)
4 Cups of shredded Kale

Steps:

  • In a skillet add the chicken broth, black beans, and onions to boil. After 5 minutes add the tomatoes and jalapeño (opt.). After 2 minutes add the kale. Cover and simmer for a few more minutes before kale wilts. Warm up tortillas and with a slotted spoon add the black bean / kale filling to the center of the tortilla to fold into a burrito. Additional add-ins can include: shredded cheese, shredded chicken or sour cream. (To fold a burrito, fold 2 opposite sides in, then gently roll up unfolded sides being careful to hold filling in)
