LAMB CHOPS WITH ROSEMARY AND GARLIC

Lamb Chops with Rosemary and Garlic image

Lamb chops are such a simple and satisfying meal. Marinate them in rosemary and garlic, sear them quickly on the stovetop, and dinner is served. Great for a romantic date night or a dinner party.

Time 50m

Yield 3

Number Of Ingredients 6

1 pound lamb rib chops
2 tablespoons minced fresh rosemary
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 garlic clove, minced
4 tablespoons extra virgin olive oil, divided

Steps:

  • Check for doneness: At this point, if you want your lamb chops rare, they are likely cooked enough. If you would like your chops more cooked, you can put them in a 400°F oven for 3 to 5 minutes, or keep them in the hot pan, lower the heat to warm, and cover the pan for a few minutes. Note that rib chops are so small, and cook so quickly, checking for internal temperature with a thermometer can be impractical. For this reason I use the finger test to check the doneness of the chops. That said, if you have an instant read thermometer and want to check thick chops, aim for 125°F for rare, 135°F medium-rare, and 140°F for medium.
  • Rest the chops: When done, remove the chops from the pan, cover with foil and let rest 3 to 5 minutes before serving.

SUNSHINE LAMB CHOPS

One word...delicious! I got this recipe from a 1973 Betty Crocker cookbook. I hope you enjoy this as much as I do.

Provided by keen5

Categories     Lamb/Sheep

Time 22m

Yield 4 serving(s)

Number Of Ingredients 5

1/2 cup honey
1/2 cup prepared mustard
1/8 teaspoon onion salt
1/8 teaspoon pepper
8 lamb rib chops (or lamb English chops or lamb sirloin chops) or 8 lamb loin chops, 1 inch thick (or lamb English chops or lamb sirloin chops)

Steps:

  • Heat honey, mustard, onion salt and pepper, stirring occasionally; keep warm over low heat.
  • Set oven control at broil and/or 550°F.
  • Broil chops 3 inches from heat 7 minutes; brush with honey mixture.
  • Turn chops; broil 5 minutes longer, brushing again with the honey mixture.
  • Serve remaining glaze with chops.

Tips:

  • Choose high-quality lamb chops: Look for chops that are evenly marbled and have a bright red color. Avoid chops that are pale or have a lot of gristle.
  • Season the chops well: Use a combination of salt, pepper, and your favorite herbs and spices. You can also marinate the chops for a few hours or overnight to help tenderize them and add flavor.
  • Cook the chops over high heat: This will help to create a nice crust on the outside while keeping the inside juicy. You can cook the chops in a skillet, on a grill, or under a broiler.
  • Don't overcook the chops: Lamb chops are best when they are cooked to medium-rare or medium. Overcooking will make them tough and dry.
  • Let the chops rest before serving: This will help the juices redistribute throughout the meat, making them more tender and flavorful.

Conclusion:

Sunshine lamb chops are a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. By following these tips, you can cook lamb chops that are juicy, flavorful, and perfectly cooked.
