SPICY HERB BAKED WINGS

Spicy Herb Baked Wings image

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 9

Extra-virgin olive oil, for frying
3 sprigs fresh rosemary
12 fresh sage leaves
1 tablespoon whole cumin seeds
1 tablespoon red pepper flakes
1/2 tablespoon whole black peppercorns
1 tablespoon garlic powder
Kosher salt
3 pounds chicken wings, whole or separated as you like

Steps:

  • Prep the rub: Pour about an inch of olive oil into a small pan over medium heat. When the oil begins to shimmer, add the rosemary and cook, turning the sprigs, until the leaves darken and become crispy, about 2 minutes. Transfer to a paper towel-lined plate. Add the sage to the same pan and cook until the leaves darken, slightly curl and stop sizzling, 30 seconds to 1 minute. Transfer to a paper towel-lined plate.
  • In a dry medium pan over low heat, combine the cumin, red pepper flakes, peppercorns and garlic powder. Toast the spices, tossing constantly to avoid burning, until fragrant, about 5 minutes. Remove from the heat and allow to cool completely.
  • Remove the rosemary leaves from their stems, then put the herbs and spices in a spice grinder and pulse until finely chopped and combined. Remove and add 1 tablespoon salt.
  • Prep the wings: Massage the wings with the herb rub and place them on a wire rack set inside a baking sheet. Let the rub set at room temperature, about 30 minutes. While the wings rest, preheat the oven to 400˚.
  • Bake the wings: Transfer the baking sheet with the rack and wings to the oven and bake until the wings are crispy, flipping halfway through, 40 to 50 minutes. Serve warm.

1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 recipe Sunny's Sauce, recipe follows
Blue Cheese Dipping Sauce, recipe follows, for serving

SUNNY'S RACKED WINGS WITH MUSTARD BBQ SAUCE

Sunny's Racked Wings with Mustard BBQ Sauce image

Provided by Sunny Anderson

Time 50m

Yield 4 servings

Number Of Ingredients 12

1 cup grainy Dijon mustard
1/2 cup beer or unsweetened tea (pilsner preferred)
1/2 cup cane syrup
2 tablespoons hot sauce (I like Texas Pete here)
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
2 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
12 whole chicken wings (wings still attached to drumettes), at room temperature
Hot Hungarian paprika, for dusting
Cushy white bread, for serving
Sweet pickle slices, for serving

Steps:

  • In a medium saucepot on medium-high heat, add the mustard, beer or tea, cane syrup, hot sauce, white vinegar, Worcestershire sauce, garlic, a pinch of salt and plenty of grinds of black pepper. Simmer until slightly thickened, about 30 minutes.
  • Heat a grill for indirect cooking to 375 degrees F.
  • Place the wings on a wire rack, then top with a second wire rack and secure with wire on both sides. Sprinkle on both sides with salt, pepper and a dusting of paprika. Place on the grill over the indirect heat, meat-side down. Close the grill and cook for about 15 minutes. Baste with the sauce, then flip the wings and brush with more sauce. Continue to grill until the wings are golden and the sauce is set and sticky, about 15 minutes more. Serve with the bread and pickles.

Tips:

  • Choose the right peanut butter. Smooth peanut butter is best for this recipe, as it will create a smooth and creamy sauce. If you use chunky peanut butter, the chunks may not dissolve completely and the sauce may be gritty.
  • Use fresh jelly. Old jelly may have lost its flavor or may have become crystallized. Fresh jelly will give your wings a brighter, more vibrant flavor.
  • Don't overcook the wings. Overcooked wings will be tough and dry. Cook them until they are just cooked through, about 10-12 minutes.
  • Serve the wings with your favorite dipping sauce. Some good options include ranch dressing, blue cheese dressing, or honey mustard.

Conclusion:

Sunny's Spicy PB&J Wings are a fun and unique twist on the classic chicken wing. They're sweet, spicy, and savory, and they're sure to be a hit at your next party. So next time you're looking for a new appetizer or snack, give these wings a try. You won't be disappointed!
