PIEROGI PIZZA

Pierogi Pizza image

Two of my favorite things blended together; tastes like pierogis on a pizza. Tasty potatoes are spread on a pizza crust and covered in all the traditional pierogi fixings - bacon, cheese, and green onions. Slice and serve with plain sour cream for dipping.

Time 2h15m

Yield 10

Number Of Ingredients 13

2 ¼ teaspoons active dry yeast
2 teaspoons white sugar
1 cup warm water
3 cups all-purpose flour
1 teaspoon salt
¼ cup olive oil
6 potatoes, thinly sliced
2 tablespoons olive oil
8 ounces sour cream
2 tablespoons garlic powder
1 (8 ounce) package marbled Colby-Monterey Jack cheese, shredded
1 bunch green onions, chopped
¼ cup bacon bits, or to taste

Steps:

  • Dissolve yeast and sugar in warm water in a small bowl. Let stand until yeast softens and begins to bubble, about 5 minutes.
  • Combine flour and salt together in a large bowl. Pour yeast mixture and 1/4 cup olive oil over flour. Mix and knead until a sticky dough forms, about 5 minutes. Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Place potatoes in a large pot and pour in enough water to cover. Bring to a boil; cook until potatoes are just tender, about 10 minutes. Drain.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat; add potatoes and cook until lightly golden, about 5 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk sour cream and garlic powder together in a small bowl to make pizza "sauce".
  • Gently pat and stretch pizza dough out to a 12-inch circle on a pizza stone. Spread sauce evenly over dough. Layer potatoes on top to cover dough completely. Sprinkle Cheddar cheese, green onions, and bacon bits on top.
  • Bake pizza in the preheated oven until crust is golden brown, 15 to 20 minutes.

SUNNY'S EASY SAUSAGE AND MUSHROOM RIGATONI PIE

Sunny's Easy Sausage and Mushroom Rigatoni Pie image

Provided by Sunny Anderson

Categories     main-dish

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 14

2 tablespoons olive oil
1 pound spicy Italian sausage, casings removed
1 pound button mushrooms, sliced
Freshly ground black pepper
One 24- to 25-ounce jar vodka sauce (you can also use Alfredo or marinara sauce)
1 pound rigatoni
1/2 cup grated (like sand) Parmesan cheese
1/2 cup chopped fresh Italian parsley
Nonstick cooking spray, for the pan
6 slices provolone cheese
6 ounces shredded mozzarella cheese
Grated (like sand) Parmesan cheese, for topping
1/4 cup chopped fresh Italian parsley
6 to 8 fresh basil leaves, torn

Steps:

  • For the sauce. In a pan with straight sides on medium heat, add the olive oil and sausage. Crumble the sausage into bits, not boulders, and cook until browned, 6 to 8 minutes. Remove the sausage with a slotted spoon to a plate, leaving the fat in the pan. Add the mushrooms to the pan and cook until wilted and darkened, 6 to 8 minutes. Season with pepper and remove from the heat. Add the sausage back to the pan along with the pasta sauce and stir.
  • For the pasta: Meanwhile, bring a large pot of water to a boil. Add the rigatoni to the boiling water and cook until very al dente. Drain and spread out on a cooling rack to prevent sticking. Let cool slightly.
  • Preheat the oven to 375 degrees F.
  • Add the rigatoni to a bowl and sprinkle with the Parmesan and parsley. Gently toss with your hands.
  • Coat the inside bottom and sides of a springform pan with cooking spray. Begin lining the rigatoni on end (vertically) around the edge of the pan, creating a border. Pack the pasta pieces tightly, but not so tight that the holes in the rigatoni close. Toss the remaining rigatoni in the sauce, then pour into the center of the pan. Gently press the mixture to level it off.
  • For the topping: Arrange the provolone slices in an overlapping spiral to cover the pasta mixture, then top with the mozzarella. Gently press everything down with your hands. Bake until the top is bubbly and golden around the edges, 30 to 35 minutes. Allow to cool slightly before releasing the springform. Serve topped with Parmesan, parsley and basil.

Categories     main-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 6

3 cups self-rising flour, plus more for rolling
2 cups plain Greek yogurt
1 heaping tablespoon garlic and herb seasoning blend
1 cup pizza sauce, BBQ sauce, pesto or Alfredo sauce
2 cups shredded mozzarella
3 toppings such as pepperoni, cooked sausage, garlic, onions and peppers, chopped rotisserie chicken, ham, pineapple, olives, etc.

Steps:

  • Preheat the oven to 400 degrees F.
  • For the dough: In a stand mixer with the paddle attachment, add the flour, yogurt and seasoning blend and mix until combined and tacky. Scrape off the dough from the paddle and replace the paddle with the kneading (dough hook) attachment. Sprinkle in a bit more flour and knead on medium until a ball forms. On a floured surface, roll out the dough to a big thin circle or divide the dough in half to make 2 pizzas.
  • For the toppings: Place the pizza on a baking sheet or pizza stone. Leaving a 1-inch border around the edge of the dough, top the pizza evenly with the sauce and cheese, then the selected toppings. Bake until the edges are golden brown, 8 to 12 minutes.
