Steps:

  • In a large bowl, dissolve yeast in warm water. Add the bread flour, oil, honey, salt and 4 cups whole wheat flour. Beat until smooth. Inspired by recipe #378013, which I really loved, but wanted to make as sourdough. I loved the result, so I'm posting it here hoping someone else loves it as much as me! I used 2 cups of 7 grain multigrain bread flour that I found at the St. Lawrence Market in Toronto, and 2 1/2 cups of Robin Hood Best for Bread Multigrain flour (which is really white, whole wheat, cracked wheat, and ground flax.) I used 1847 Oregon Trail Sourdough which I had just gotten two days prior, but any sourdough would do! The flour can be a combination of multigrain and whole wheat or white flour, to your taste preference. If you're so inspired, top this loaf with 7 grain cereal, oats, bran. Spray the loaf with Pam or water and then sprinkle with the topping before baking.

I highly recommend using a brotform and a baking stone, or a clay baker, but it works well with a simple loaf pan.
  • Preheat oven to 375. If using a stone, place it in while preheating, for around 20 minutes. If using a clay baker, follow the usual process.
  • If using topping, spray with Pam or water, and sprinkle it on top. Slash top. Bake in centre of 375°F (190°C) oven until instant-read thermometer registers 215°F (102°C) and/or loaf is golden and sounds hollow when tapped on bottom, 50 minutes. Transfer to rack; let cool.

1 (.25 ounce) package instant yeast
¼ cup light brown sugar
1 cup warm skim milk
¼ cup ground sunflower seeds
1 cup high-gluten bread flour
2 ½ cups whole wheat flour
2 tablespoons almond oil

Steps:

  • In a small mixing bowl, dissolve yeast and sugar in warm milk. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the yeast mixture with sunflower seeds, flour and salt; mix well. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 30 minutes.
  • Lightly grease a 9x5 inch loaf pan. Deflate the dough and turn it out onto a lightly floured surface. Form the dough into a loaf and place it into the prepared pan. Brush the top with almond oil and cover with a damp cloth. Let rise until doubled in volume, about 40 minutes. Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Let cool on a wire rack 20 minutes before slicing.

1 (1/4 ounce) package active dry yeast
1 teaspoon white sugar
3/4 cup water (110 degrees F/45 degrees C)
1 1/2 cups buttermilk
2 tablespoons margarine, melted
3 tablespoons honey
2 teaspoons salt
2 tablespoons sesame seeds
2 tablespoons flax seeds
2 tablespoons poppy seeds
2 tablespoons toasted wheat germ
2 tablespoons sunflower seeds
2 cups whole wheat flour
4 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast and sugar in the warm water.
  • Let stand until creamy, about 10 minutes.
  • Combine buttermilk, butter or margarine, honey and the yeast mixture in a large bowl.
  • Add the salt, all of the seeds and the whole wheat flour and wheat germ.
  • Stir to combine.
  • Add the bread flour, 1/2 cup at a time, mixing well with a wooden spoon after each addition.

  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with the oil.
  • Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
  • Preheat oven to 375 degrees F.
  • Grease two 9x5 inch loaf pans.
  • Deflate the dough and turn it out onto a lightly floured surface.
  • Divide the dough into two equal pieces and form into loaves.
  • Place the loaves into the prepared pans.
  • Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Bake at 375 degrees F for about 30 minutes or until the tops are brown and the bottom of a loaf sounds hollow when tapped.
  • Makes 2 loaves.

Tips:

  • For a crispy crust, brush the top of the bread with melted butter or milk before baking.
  • If you don't have a bread machine, you can mix and knead the dough by hand. Just be sure to knead it for at least 10 minutes, or until it is smooth and elastic.
