SLOW-COOKER BARBECUE RIBS

Slow-Cooker Barbecue Ribs image

Yes, you can cook ribs in a slow cooker! In this easy recipe, the seasoning paste transforms into a savory dipping sauce. Slather it on the ribs and pop them on the grill just before serving for a final char.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h40m

Yield 6 servings

Number Of Ingredients 11

One 6-ounce can tomato paste
1/3 cup packed dark brown sugar
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon ground mustard seeds
2 teaspoons granulated garlic
2 teaspoons smoked paprika
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 racks baby back ribs (about 3 pounds)
Oil, for grilling

Steps:

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

STICKY SPICY SLOW-COOKED RIBS

Sticky Spicy Slow-Cooked Ribs image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 5h15m

Yield 12 servings

Number Of Ingredients 12

2 racks pork ribs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
One 13-ounce jar apricot preserves
1 cup ketchup
1/4 cup yellow mustard
1/4 cup soy sauce
6 cloves garlic, finely chopped
2 canned chipotle peppers in adobo, finely chopped
1-inch piece fresh ginger, finely chopped
Hot sauce, to taste
3 tablespoons cornstarch

Steps:

  • Cut the racks into 2-rib pieces, season with salt and pepper and put into a slow cooker.
  • In a bowl, mix together the preserves, ketchup, mustard, soy sauce, garlic, chipotles, ginger and hot sauce. Pour the mixture over the ribs and cover. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • When the ribs are cooked, preheat the oven to 375 degrees F. Line a baking sheet with foil.
  • Carefully remove the ribs from the slow cooker and place them in a single layer on the prepared baking sheet. Skim the fat from the juices and transfer the juices to a pan. Place the pan on medium-high heat and bring to a simmer.
  • Mix the cornstarch and 3 tablespoons water in a small bowl to create a slurry. Stir the slurry into the juices in the pan and cook until the desired thickness.
  • Brush the ribs with the sauce and bake, brushing with more sauce every 10 to 15 minutes, until the ribs are glazed and sticky, about 45 minutes. Serve with extra sauce.

Tips:

  • To ensure fall-off-the-bone ribs, cook them low and slow for at least 2 hours. Increase the cooking time if necessary, depending on the desired tenderness.
  • Enhance the flavor of the ribs by using a flavorful rub or marinade. A combination of spices, herbs, and seasonings will provide a delicious crust.
  • Add moisture to the ribs by wrapping them in foil or placing them in a covered roasting pan. This will prevent them from drying out during the cooking process.
  • Baste the ribs with the cooking liquid or a sauce of your choice to keep them moist and flavorful. Do this every 30-45 minutes during the cooking process.
  • Let the ribs rest for 10-15 minutes before serving. This will allow the juices to redistribute and result in more tender and flavorful meat.

Conclusion:

With careful preparation and attention to detail, you can create delicious and tender spare ribs that will be a hit at your next gathering. Experiment with different rubs, marinades, and sauces to find the combination that best suits your taste preferences. Whether you prefer sweet, savory, or spicy ribs, there's a recipe out there to satisfy your cravings. So gather your ingredients, preheat your oven, and get ready to indulge in a satisfying meal of slow-cooked spare ribs.
