1 small red pepper
2 plum tomatoes, coarsely chopped
1 small onion, chopped
3 tablespoons chopped fresh basil
2 garlic cloves, peeled
1/4 teaspoon dry crushed red pepper
1 (8 ounce) jar sun-dried tomatoes packed in oil, drained, cut into strips
3/4 cup water
1/4 cup whipping cream
1/4 cup red wine vinegar
3 tablespoons fresh lemon juice
1/3 cup vegetable oil

Steps:

  • Char bell pepper over gas flame or in a broler until blackened all over.
  • Enclose in a paper bag and let stand 10 minutes.
  • Peel and seed; coarsely chop.
  • Combine bell pepper and next 5 ingredients ina food processor.
  • Blend until almost smooth.
  • Transfer to a medium bowl.
  • Mix sun dried tomatoes, 3/4 cup water, cream, vinegar and lemon juice in food processor.
  • With machine running, add oil; blend until almost smooth.
  • Whisk sun dried tomato mixture into bell pepper mixture.

From 5/7/03 Chicago Sun-Times, I've been searching for recipes using dried tomatoes to use in Mirj's Oven-dried tomatoes recipe #14681 This one seems to fit the bill. Prep times are approximate.

Number Of Ingredients 8

2 small shallots, peeled and quartered
1 garlic clove, peeled and halved
6 sun-dried tomatoes, chopped
6 brine-cured black olives, such as kalamata, pitted
3 tablespoons balsamic vinegar
1 tablespoon fresh thyme leaves or 1 tablespoon chopped fresh basil
salt & fresh ground pepper
3/4 cup olive oil

Steps:

  • With food processor running, drop shallots and garlic through feed tube and process until finely chopped.
  • Stop machine; add sun-dried tomatoes, olives, vinegar, thyme, salt and pepper; process until finely minced.
  • With machine running, slowly pour olive oil through feed tube and process until smooth.
  • Adjust seasonings and use immediately or cover and refrigerate.
