1-1/2 cups biscuit/baking mix
1/3 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 cup buttermilk
3 tablespoons oil-packed sun-dried tomatoes, drained and finely chopped
1-1/2 teaspoons butter, melted

Steps:

  • In a large bowl, combine the biscuit mix, cheeses, Italian seasoning, onion powder and garlic powder. Stir in buttermilk and tomatoes just until moistened., Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Bake at 425° for 8-12 minutes or until golden brown. Brush with butter. 2 cups unbleached white flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1/2 cup unsalted butter, frozen
2 eggs
1/2 cup buttermilk
1/3 cup sun-dried tomato, finely chopped
1 tablespoon finely chopped thyme

Steps:

  • Preheat oven to 400 degrees. In a large bowl, sift together the dry ingredients. Finely chop the butter. By hand or in a food processor, blend with the dry ingredients. The mixture should not be thoroughly blended, but should have small, pea-sized clumps of butter and flour. In a small bowl, whisk the eggs and buttermilk together.
