THREADGILL'S COTTAGE CHEESE CUCUMBER SALAD

Threadgill's Cottage Cheese Cucumber Salad image

This refreshing salad from Threadgill's brings back fond memories of iced tea, live music, fried catfish, and other delights from the Austin, TX restaurant. The dish can be served as a side salad, or, for a low-calorie lunch, serve on a bed of lettuce with some tomato wedges sprinkled with salt & pepper. I clipped the recipe from the Austin American Statesman many years ago. The original called for fresh parsley, but I like it with the dill.

Categories     Vegetable

Time 5m

Yield 4 serving(s)

Number Of Ingredients 6

16 ounces low fat cottage cheese
1 cucumber
2 tablespoons chopped fresh dill
1/4 cup chopped green onion
pepper
Tabasco sauce

Steps:

  • Peel the cucumber and slice lengthwise into halves. Scrape out the seeds and discard, then chop the cucumber.
  • In a medium bowl, mix together the cottage cheese, cucumber, dill, and green onion. Fresh dill is best, but if you must substitute, use only 1 tsp of dried.
  • Sprinkle on some black pepper and 3 dashes of Tabasco, stir again, and taste. Add more pepper and Tabasco to your taste. If you wish, skip the Tabasco and let everybody add it to their own serving.
  • Serve immediately.

Tips:

  • Choose the freshest cucumbers you can find. Look for cucumbers that are firm and have a deep green color. Avoid cucumbers that are yellow or have soft spots.
  • Peel the cucumbers before slicing them. This will help to remove any bitterness from the cucumbers.
  • Use a sharp knife to slice the cucumbers. This will help to ensure that the slices are even and uniform.
  • If you are using a mandoline to slice the cucumbers, be sure to use the safety guard to protect your fingers.
  • Add the sliced cucumbers to a bowl and toss them with salt. This will help to draw out the excess moisture from the cucumbers and make them more crisp.
  • Let the cucumbers sit for 30 minutes before draining them. This will allow the salt to do its work.
  • Rinse the cucumbers with cold water and drain them well.
  • Add the cucumbers to a serving bowl and top them with the cottage cheese, red onion, dill, and pepper. Toss to combine.
  • Serve the salad immediately or chill it for later.

Conclusion:

This Summertime Cucumber and Cottage Cheese Salad is a refreshing and easy-to-make side dish that is perfect for any summer gathering. The combination of crisp cucumbers, creamy cottage cheese, tangy red onion, and fresh dill is sure to please everyone. This salad is also a great way to use up any extra cucumbers you have on hand. So next time you're looking for a light and refreshing side dish, give this Summertime Cucumber and Cottage Cheese Salad a try.
