Time 11h20m

Yield 12

Number Of Ingredients 19

1 pound dried red beans
3 quarts water
1 bay leaf
1 ½ pounds boneless pork shoulder, cut into 2-inch cubes
1 yellow onion, chopped
1 cup barbecue sauce
½ cup ketchup
⅓ cup apple cider vinegar
¼ cup packed light brown sugar
3 tablespoons molasses
2 tablespoons yellow mustard
1 teaspoon Worcestershire sauce
1 tablespoon smoked paprika
⅛ teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
1 teaspoon garlic powder
2 ½ cups reserved bean cooking liquid
6 slices thick-cut bacon

Steps:

  • Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
  • Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
  • While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
  • Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

SUMMER'S BEST BBQ BEANS

Summer's Best BBQ Beans image

Quick & Easy. Found this in Better Homes & Gardens (June 07). Great side dish for a picnic, BBQ or when you're in the mood for a tasty bean dish. For sweet and smoky flavor, pineapple and molasses are substituted for the familiar bacon and sugar. I have also made this without the pineapple and added a 14 oz can Fire Roasted Diced Tomatoes..we enjoyed it that way too; this recipe you can tinker with and still enjoy the results.

BBQ BAKED BEANS

BBQ Baked Beans image

BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar

Tips:

  • Choose the Right Beans: Use dried beans for a more flavorful result. Great options include kidney beans, pinto beans, black beans, or a mix.
  • Soak Your Beans: Soaking the beans overnight (or at least for a few hours) reduces cooking time and helps remove any impurities.
  • Cook Your Beans Properly: Follow the instructions on the bean package for cooking times and water ratios. You want the beans to be tender but not mushy.
  • Use Fresh Ingredients: Fresh vegetables and herbs add flavor and color to your baked beans. Use the best quality ingredients you can find.
  • Don't Overcook Your Beans: Overcooked beans will become mushy and lose their flavor. Keep an eye on them during cooking and remove them from heat as soon as they are tender.
  • Add Sauce and Seasonings: Use a combination of BBQ sauce, brown sugar, and spices to create a flavorful sauce for your beans. You can also add diced onions, bell peppers, or jalapenos for extra flavor.
  • Bake Your Beans: Pour the beans and sauce mixture into a baking dish and bake in a preheated oven until the beans are heated through and the sauce has thickened. This usually takes about 30-45 minutes.
  • Serve Your Beans: Baked beans are a great side dish for picnics, potlucks, or barbecues. They can also be served as a main course with cornbread or rolls.
