SUMMER SQUASH GRATIN WITH PICKLED RYE BREAD CRUMBS

Summer Squash Gratin With Pickled Rye Bread Crumbs image

This rustic casserole was first developed using a specialty pickled rye bread from Carissa's The Bakery in East Hampton, N.Y. The same effect is achieved in this recipe by mixing fresh rye bread crumbs (or even white bread crumbs) with a splash of pickle juice. Summer squash and zucchini are layered with caramelized onions, Gruyère and a handful of the bread crumbs, which help absorb excess moisture. If you can find patty pan squash, it makes for a particularly beautiful presentation.

Categories     brunch, dinner, lunch, casseroles, vegetables, main course, side dish

Time 40m

Yield 6 to 8 servings

Number Of Ingredients 11

2 pounds medium zucchini, yellow summer squash or a combination, trimmed
Kosher salt
6 tablespoons unsalted butter (3/4 stick)
3 cups rye bread crumbs (about 8 ounces), preferably from day-old seeded or seedless loaf
3 tablespoons pickle juice, from a jar of dill pickles
1 large yellow onion, halved and thinly sliced
1 tablespoon minced garlic (about 2 large cloves)
1 teaspoon roughly chopped fresh thyme leaves
1/4 teaspoon red-pepper flakes
1/2 teaspoon black pepper
1 1/2 cups grated Gruyère (about 4 ounces)

Steps:

  • Heat the oven to 400 degrees. Slice squash 1/4-inch thick, sprinkle with 2 teaspoons salt, and place in a colander set in the sink for at least 30 minutes and up to 1 hour, tossing occasionally with your hands. Gather the squash in a kitchen towel or paper towel and squeeze gently to remove excess moisture.
  • While the squash drains, melt 3 tablespoons butter in a 10-inch cast-iron skillet over medium heat. Add the breadcrumbs, 1 tablespoon pickle juice and 3/4 teaspoon salt. Stir until all the butter is absorbed, transfer to a bowl and set aside. Wipe the skillet clean using a paper towel.
  • Heat 1 tablespoon butter in the skillet over medium-low. Add the onions and cook, tossing occasionally, until the onions are lightly caramelized, 15 to 20 minutes. Add the remaining 2 tablespoons pickle juice, the garlic, thyme, red-pepper flakes, pepper and 1/2 teaspoon salt and cook until the garlic is fragrant, about 1 minute. Off the heat, stir in 2 tablespoons butter until melted.
  • Add half the squash to the skillet and toss with tongs until combined. Add the rest of the squash and toss again. Add the Gruyère, along with 1/3 of the bread crumbs and toss well. Arrange into one packed layer, sprinkle with the remaining bread crumbs and bake until browned and bubbling, 30 to 35 minutes. Serve hot.

Categories     Vegetable

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 13

zest of one lemon
1 1/2 lbs summer squash or 1 1/2 lbs zucchini, cut into 1/6th-inch slices
1/2 teaspoon fine grain sea salt
1/4 cup fresh oregano leaves
1/4 cup fresh Italian parsley
1 large garlic clove, chopped
1/4 teaspoon fine grain sea salt
1 pinch red pepper flakes
1/2 cup extra virgin olive oil
1/4 cup unsalted butter
2 cups fresh breadcrumbs (whole wheat)
1/2 lb yukon gold potato, sliced transparently thin
3/4 cup grated gruyere cheese, grated on a box grater

Steps:

  • Preheat oven to 400F degrees and place a rack in the middle. Rub a 9x9 gratin pan (or equivalent baking dish) with a bit of olive oil, sprinkle with lemon zest, and set aside.
  • Place the zucchini slices into a colander placed over a sink, toss with the sea salt and set aside for 10-15 minutes (to drain a bit) and go on to prepare the oregano sauce and bread crumbs.
  • Make the sauce by pureeing the oregano, parsley, garlic, 1/4 teaspoon salt, red pepper flakes, and olive oil in a food processor or using a hand blender. Set aside.
  • Make the breadcrumbs by melting the butter in a small saucepan over medium heat. Cook for a few minutes until the butter is wonderfully fragrant, and has turned brown. Wait two minutes, then stir the breadcrumbs into the browned butter.
  • Transfer the squash to a large mixing bowl. Add the potatoes and two-thirds of the oregano sauce. Toss until everything is well coated. Add the cheese and half of the bread crumbs and toss again. Taste one of the zucchini pieces and add more seasoning (salt or red pepper) if needed.
  • Transfer the squash to the lemon-zested pan, top with the remaining crumbs, and bake for somewhere between 40 and 50 minutes - it will really depend on how thinly you sliced the squash and potatoes - and how much moisture was still in them. You don't want the zucchini to go to mush, but you need to be sure the potatoes are fully baked. If the breadcrumbs start to get a little dark, take a fork and rake them just a bit, that will uncover some of the blonder bits. Remove from oven, and drizzle with the remaining oregano sauce.

SUMMER SQUASH AU GRATIN

Summer Squash Au Gratin image

Last night as we were eating dinner, I kept stealing glances into the kitchen; gazing at the end counter. Then I caught myself and realized how far off the deep end I've thrown myself. It wasn't that long ago that I did the same thing after buying a new Stephen King book and adding it to my collection. Heck, I can still clearly remember coming home with a few new LP's, peeling off the shrink wrap; and poring over the album covers; back when album covers a) existed and b) were big enough to actually pore over. Last night though, last night I was reveling in a vision of vegetables. My counter is piled high with yellow squash, zucchini, sweet corn, cucumbers and more. And I don't even have a garden any more. Every time a friend drops by to share some of their abundance, I restrain myself from doing what would embarrass the rest of my family to the point of never venturing out in public again. For their sake, I wait until my friend is gone, then and only then, I do my Happy Food Danc

SUMMER SQUASH GRATIN

Summer Squash Gratin image

A great dish of summer squash or zucchini, cheese, and breadcrumbs that is one of my husband's favorites. (Inspired by the smitten kitchen).

Provided by littlecat123

Categories     Vegetable

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 lbs summer squash
1 teaspoon sea salt (or to taste)
1 cup fresh breadcrumb
3 tablespoons unsalted butter
3/4 cup thinly sliced shallot (from 4 to 5 medium)
1 cup swiss cheese or 1 cup other cheese
1/2 teaspoon fresh ground black pepper (or to taste)

Steps:

  • Heat your oven to 400°F.
  • Cut the squash into thin (1/8-inch thick) coins. Toss with 1 teaspoon kosher salt and set aside for at least 10 minutes. Drain zucchini in a colander, and if you have time, spread them on a towel for a few minutes to further wick away moisture before placing it in a large mixing bowl.
  • Meanwhile, place breadcrumbs in a small bowl. In a small skillet or saucepan, melt butter and keep cooking it over medium heat until it browns and smells nutty.
  • Carefully pour (in a small drizzle at first) over breadcrumbs and be sure to scrape out any brown bits from the pot. Toss crumbs to evenly coat.
  • Add shallots, gruyere, half the breadcrumbs, and some freshly ground black pepper to the bowl with the summer squash and toss. Transfer to a 9×9-inch (or equivalent; I used a 9-inch round cast-iron skillet) baking dish. Scatter remaining breadcrumbs over the top and bake 35 to 40 minutes, until the squash is tender and the crumbs are crisp.

Tips:

  • Choose small to medium-sized summer squash, about 6 inches long and 2 inches in diameter.
  • Use a mandoline or sharp knife to slice the squash into thin, even slices.
  • If you don't have a mandoline, you can use a vegetable peeler to create long, thin strips of squash.
  • Use a variety of cheeses in your au gratin. A good combination is cheddar, Parmesan, and Gruyère.
  • Breadcrumbs add a nice crunchy texture to the au gratin. You can use fresh or dried breadcrumbs.
  • If you don't have heavy cream, you can use half-and-half or even milk.
  • Season the au gratin to taste with salt, pepper, and garlic powder.
  • Bake the au gratin until it's golden brown and bubbly.
  • Let the au gratin cool for a few minutes before serving.

Conclusion:

Summer squash au gratin is a delicious and easy-to-make side dish that's perfect for any occasion. It's a great way to use up summer squash and it's also a good source of vitamins and minerals. So next time you're looking for a new side dish, give summer squash au gratin a try.
