This is another recipe from Vegetarian Express--just in time to use up more squash. I may make this by the weekend. We don't have a garden, but were given some squash. But, I need fresh tomatoes. However, I think I have some canned tomatoes, which would do in a pinch. But, nothing beats fresh garden tomatoes! You could also use...

Time 45m

Number Of Ingredients 8

1 Tbsp olive oil
2 Tbsp water
2 clove garlic, minced
2 medium yellow summer squashes, quartered lengthwise and sliced 1/4 inch thick
1 lb bag thawed frozen corn kernels (may use fresh)
2 medium ripe tomatoes, diced
2-3 scallions (green onions), minced
salt and freshly ground pepper, to taste

Steps:

  • 1. Heat the oil and water, in a large skillet. Add the garlic and squash and sauté over medium-high heat, until squash is tender-crisp, about 5-7 minutes.
  • 2. Add the remaining ingredients and sauté 5-7 minutes more, or until the tomatoes are slightly softened and the mixture is heated through.

Tips:

  • Choose the right type of summer squash. For this recipe, yellow squash and zucchini are both good choices. They should be firm and have no blemishes.
  • Cut the squash and corn into uniform pieces. This will help them cook evenly.
  • Don't overcrowd the pan. If you do, the vegetables will steam instead of sauté.
  • Cook the vegetables over high heat. This will help them brown and develop flavor.
  • Season the vegetables to taste. Salt, pepper, and garlic powder are all good options.
  • Serve the sauté immediately. It is best when fresh.

Conclusion:

This summer squash and corn sauté is a quick, easy, and delicious side dish. It is perfect for a summer cookout or potluck. The vegetables are cooked to perfection and are full of flavor. The sauté can be served as is or with a dollop of sour cream or yogurt. So next time you're looking for a healthy and flavorful side dish, give this summer squash and corn sauté a try. You won't be disappointed!
