Time 1h40m

Yield 8

Number Of Ingredients 15

Crust:
1 1/4 cup flour
1 1/2 teaspoons sugar
1/2 teaspoon salt
4 oz (1/2 cup, 1 stick, 8 Tbsp) butter, cut into small (1/2-inch) cubes, chilled in freezer at least 15 minutes, preferably an hour
4 to 6 Tbsp ice water
Filling:
2 large, not-overly-ripe yellow peaches (about 3/4 pound total), pitted, sliced into 1/4-inch to 1/2-inch slices
3 Tbsp sugar
1 Tbsp flour
1/2 teaspoon vanilla extract
1 Tbsp almond paste (optional)
1 teaspoon butter
1 egg
A sprinkling of coarse sugar (optional)

Steps:

  • Make the crust dough: In a food processor, pulse the flour, sugar, and salt, until well mixed. Add the cubed butter, and pulse 8 times. The butter should still be the size of peas in the mixture. Slowly add the ice water, a tablespoon or two at a time, pulsing after each addition, until the dough just begins to clump. Turn out onto a clean surface. Use your clean hands to form into a disc. Do not over-knead. Work the dough only enough to bring it barely together into a disk. Sprinkle with a little flour on all sides, wrap with plastic, and place into the refrigerator to chill for an hour. (See our pate brisee recipe for more detailed instruction if you are new to making crusts.)
  • Toss peaches with flour, sugar, vanilla: Preheat the oven with the rack in the middle position to 425°F (220°C). Place the peach slices in a bowl and sprinkle with the flour and sugar. Toss gently to coat. Sprinkle vanilla extract over the peaches.
  • Whisk egg: In a small bowl, whisk the egg until smooth and set aside.

PEACH GALETTE

Peach Galette image

This summer peach galette is a sheet pan dessert that's easier than pie. Serve it this summer with a big scoop of vanilla ice cream!

Categories     baking     dessert

Time 15m

Yield 10-12 servings

Number Of Ingredients 10

All-purpose flour, for dusting
2 refrigerated pie doughs (from one 14-oz box)
1/2 c. granulated sugar
2 tsp. ground cinnamon
1 tbsp. plus 1 tsp. cornstarch
6 medium peaches, pitted and sliced (about 6 cups)
1 tbsp. lemon juice
2 tbsp. heavy cream
1 tbsp. coarse sugar (like turbinado)
Vanilla ice cream and caramel sauce, for serving (optional)

Steps:

  • On a lightly floured surface, unroll the two pie doughs. Overlap the dough by 3 inches to make a long, rectangular shape. Using a rolling pin, roll back and forth over just the center of the dough to bind them together, close the gaps between the two circles, and make it an even thickness. Transfer to a large, parchment-lined baking sheet.
  • Preheat the oven to 425˚.
  • Combine the granulated sugar, cinnamon and cornstarch in a large bowl. Add the peach slices and lemon juice and toss gently to coat.
  • Arrange the peaches in a single layer on the pie dough, overlapping slightly, leaving a 1 ½-inch border. Fold the edges of the dough over the outer edge of the peaches, crimping every 3- to 4-inches, to keep the crust flat against the fruit. Brush the edges of the dough all over with heavy cream and sprinkle with coarse sugar. Drizzle ¼ cup of the liquid left in the mixing bowl over the peaches.
  • Bake for 10 minutes. Reduce the oven temperature to 375˚ and bake for another 30 to 35 minutes, until the filling is bubbly and the crust is golden brown. Cool 5 minutes on the baking sheet, then slide the galette, on the parchment paper, to a cooling rack. Let cool at least 30 minutes before slicing. Serve warm with vanilla ice cream and caramel sauce, if you like.

Add the butter and toss quickly (and carefully!) with your fingers to coat each cube of butter with the flour. Pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough comes together. Turn the dough out onto a well-floured board, roll it into a ball, cut in half, and form into 2 flat disks. Wrap the disks in plastic and refrigerate for at least 1 hour. If you only need 1 disk of dough The other disk of dough can be frozen.

  • Cut the peaches and plums in wedges and place them in a bowl with the blueberries. Toss them with 1 tablespoon of the flour, 1 tablespoon of the sugar, the orange zest, and the orange juice. Place the mixed fruit on the dough circle, leaving a 1 1/2-inch border.
  • Combine the 1/4 cup flour, the 1/4 cup sugar, and the salt in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts to hold together. Sprinkle evenly over the fruit. Gently fold the border of the pastry over the fruit, pleating it to make an edge.

SUMMER FRUIT GALETTES

Here's a quick and easy way to create a beautiful summer fruit dessert. I love to use fresh peaches, strawberries and blueberries, but frozen fruits should also work. You can also use fresh nectarines or apricots in place of the peaches. It will look like you spent hours making this fancy 30 minute dessert! Pairs great with a scoop of vanilla ice cream.

Tips:

  • Choose ripe, juicy peaches for the best flavor.
  • Peel the peaches before slicing them to make the galette easier to eat.
  • Use a sharp knife to slice the peaches thinly so they cook evenly.
  • Toss the peaches with sugar, cornstarch, and lemon juice before filling the galette. This will help to thicken the filling and prevent it from being too runny.
  • Roll out the dough thinly so it is easy to fold over the peaches.
  • Brush the edges of the dough with egg wash before baking. This will help to seal the edges and prevent them from becoming dry.
  • Bake the galette at a high temperature for the first 15 minutes, then reduce the temperature to finish baking. This will help to create a crispy crust and a tender filling.

Conclusion:

This summer peach galette is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of sweet peaches, flaky crust, and creamy filling is sure to please everyone. You can serve the galette warm or cold, with a scoop of vanilla ice cream or whipped cream. Be sure to enjoy it while peaches are in season!
