16 oz whole grain pasta (shells or rotini)
1 1/2 c canalope melon
1 1/2 c honeydew melon
1 1/2 c pineapple ( 1" cubes)
1 1/2 c fresh red seedless grapes (halved)
6 large strawberries, fresh
8 oz cream cheese
4 Tbsp limeade, frozen
2 Tbsp honey

Steps:

  • 1. Boil pasta in sugared water as directed on package for al dente. I add about 1/8c sugar to my water while boiling the pasta. That way the pasta is sweet not salty.
  • 2. Drain & cool pasta. Do Not rinse.
  • 3. While pasta is cooling cut fruit. If I am in a hurry I buy cut fruit in the produce department. Cut the grapes in half. It is just easier to eat. Set fruit aside.
  • 4. In a bowl mix cream cheese, limeaid and honey until smooth.
  • 5. In a large bowl combine all ingredients. (Pasta & fruit). Mix well but don't break up pasta. Now add your cream cheese dressing. You want is well dressed but not soupy. Refrigerate until ready to enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

3 cups uncooked medium pasta shells
1 can (20 ounces) unsweetened pineapple chunks, drained
1 large navel orange, peeled, sectioned and halved
1 cup halved red grapes
1 cup halved green grapes
1 medium apple, chopped
1 large firm banana, cut into 1/4-inch slices
1 cup plain yogurt
1/4 cup orange juice concentrate

8 ounces uncook elbow macaroni
3/4 cup plain fat-free yogurt
3/4 cup reduced-fat mayonnaise
4 teaspoons fresh dill, snipped
1/4 teaspoon salt
1 dash hot pepper sauce
2 medium tart green apples, chopped
2 medium red apples, chopped
1 1/2 cups seedless grapes
2 celery ribs, thinly sliced
1 (15 ounce) can mandarin oranges, drained
2 medium firm bananas, cut into 1/4 inch slices
1/2 cup walnuts

Steps:

  • Cook pasta according to package directions.
  • Rinse with cold water and drain.
  • In a bowl, combine the yogurt, mayonnaise, dill, salt and hot pepper sauce.
