1 thin cucumber or 2 cucumber pickles peeled , halved and cut thin
1 - 2 green onions chopped partially up stem
1 - 2 pinches dill (optional)
salt/pepper to taste
garnish: w/ cherry tomatoes, cherry peppers, fresh green pepper strips, raddishes or whatever suits your fancy

The following recipe is enough for a party, but you can always scale it down for your family.

3 (32 ounce) containers small curd cottage cheese
2 large cucumbers, clean and dried
2 large green bell peppers (red or yellow can substitute or you can mix and match to suit; clean and dried)
2 large firm tomatoes or 5 firm roma tomatoes, clean and dried
2 (1 ounce) packages hidden valley ranch dip mix

Steps:

  • Chop Cucumbers, Peppers, and Tomatoes into manageable bite size hunks, and place in large mixing bowl.
  • Pour both packs of the dry dip mix over veggies and mix to coat.
  • Fold in cottage cheese and mix to distribute dip mix and veggies throughout then Chill until ready to go to party.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • If you don't have fresh herbs, you can use dried herbs instead. Just use about 1/3 of the amount called for in the recipe.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • To make the salad ahead of time, prepare the dressing and vegetables and store them separately in the refrigerator. Then, assemble the salad just before serving.
