SUNNY'S ORANGE JALAPEñO PARTY RIBS

Provided by Sunny Anderson

Categories     main-dish

Time 5h50m

Yield 4 to 6 servings

Number Of Ingredients 13

1 cup orange marmalade
1/2 cup chopped white onion
1/4 cup brown sugar, light or dark
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
2 jalapeños, one seeded, both finely chopped
1 clove garlic, grated on a rasp
Zest of 1 orange (if using fresh orange juice)
Kosher salt and freshly ground coarse black pepper
1 cup orange juice (preferably fresh)
3 to 4 pounds baby back pork ribs, sliver skin removed
Kosher salt and freshly cracked black pepper
1 orange, sliced into wedges, for serving

Steps:

  • For the sauce: Add the marmalade, onions, brown sugar, ketchup, Worcestershire sauce, jalapeños, garlic, orange zest, a pinch of salt and plenty of coarse ground black pepper to a medium pot on medium-high. Bring to a simmer and cook until slightly reduced and thickened. Remove from the heat and divide as follows: for the basting liquid, pour 1/4th of the sauce into a medium bowl and whisk in the orange juice. Pour the remaining sauce into a medium bowl to use as the glazing liquid.
  • For the ribs: Preheat the oven to 250 degrees F. Sprinkle the ribs generously on all sides with salt and pepper and place on a rimmed baking sheet, bone-side down. Brush lightly all over with the basting liquid. Pour all the remaining basting liquid into the bottom of the baking sheet and cover tightly with aluminum foil. Cook 3 to 5 hours, basting with the liquid every hour and re-covering tightly each time. After 3 hours, begin checking the ribs for doneness by gently pulling at the middle bone to see if it will release easily from the meat. The ribs are also done with about a 1/2-inch of the bone showing on the ends, or a pull at the middle bone feels like it will release the meat.
  • Once the ribs are cooked remove the aluminum foil and brush the ribs with the reserved sauce. Adjust the rack to the bottom of the oven, turn the broiler on high and cook the ribs until the glaze caramelizes, about 10 minutes.
  • Remove the ribs from the oven onto a cutting board, tent with aluminum foil and let rest for 10 minutes. Cut into 1- or 2-bone slices and serve with orange wedges.

CITRUS BBQ CHICKEN

The bright, tangy flavors of orange and lemon come together with this easy bbq sauce base to pull triple-duty as marinade, glaze, and sauce.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 11

4 skin-on chicken leg quarters, cut into 8 pieces
1 1/3 cups ketchup
2 tablespoons light brown sugar
Juice and zest of 1 orange
Juice and zest of 1 lemon
3 cloves garlic, grated
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 1/2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Put the chicken in a large resealable plastic bag.
  • Whisk the ketchup, brown sugar, orange zest and juice, lemon zest and juice, garlic, Dijon, Worcestershire sauce, cumin, smoked paprika, 1 teaspoon salt, and a few grinds of black pepper together in a 4-cup liquid measuring cup (or alternatively a medium bowl) until combined.
  • Remove 1 cup of the sauce and add the remaining sauce to the resealable plastic bag with the chicken. Seal and toss the bag to evenly coat the chicken. Marinate the chicken in the refrigerator for 1 hour and up to overnight.
  • Meanwhile, add the remaining sauce to a small saucepan. Bring the sauce to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce thickens, about 10 minutes. Reserve reduced sauce for glazing and serving.
  • Prepare a grill for medium-high heat.
  • Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken skin-side down on the grill, leaving some space between each. Cook until deep grill marks form and releases easily from the grill, about 4 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more.
  • Brush the skin side of the chicken with some of the reduced sauce. Flip the chicken pieces and brush the other side of the chicken with the sauce and continue to cook, sauce-side down, for an additional minute. Flip and grill for 1 minute more. Transfer the chicken to a platter and let rest for 5 minutes.
  • Serve the chicken with the remainder of the sauce.

POMEGRANATE MOLASSES BARBECUE SAUCE

Pomegranate Molasses Barbecue Sauce image

I was sent some pomegranate molasses as a sample to try and loved its sweet and sour, tangy kind of taste. I reckoned that it would work brilliantly in a barbecue sauce -- and our kids agreed. You can use as a barbecue mop in the last 30 minutes of cooking your meat on the barbecue or marinate chicken or other meat in sauce for at least 30 minutes before cooking in oven or on barbecue. Do not grill or bake for longer than 45 minutes, as the sugar syrups and tomato ketchup are likely to burn and make the food taste bitter.

Growing up in Texas, I got used to a certain type of BBQ. After I moved to Florida, I loved how lots of different citruses were being added to BBQ sauces. Provided by Steven Raichlen

Categories     easy, condiments, side dish

Time 10m

Yield 1 1/2 cups

Number Of Ingredients 9

1/2 cup olive oil
8 large cloves garlic, thinly sliced crosswise
2/3 cup fresh sour orange juice (or 1/2 cup fresh lime juice and 3 tablespoons fresh grapefruit juice)
1/3 cup water
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 1/2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped fresh cilantro or flat-leaf parsley

Steps:

  • Heat olive oil in deep saucepan over medium heat. Add garlic, and cook until fragrant and pale golden brown. Do not let brown too much, or else garlic will become bitter.
  • Stir in sour orange juice (or lime juice and grapefruit juice), water, cumin, oregano, salt and pepper. Stand back, because the sauce may spatter. Bring to rolling boil. Correct the seasoning, adding more salt and pepper, if needed. Let cool to room temperature, and then stir in cilantro or parsley. Store in bottle or jar with tight-fitting lid; shake well before serving. Serve with grilled pork, chicken, seafood and vegetables.

Tips:

  • Select the Right Citrus: Choose juicy and flavorful citrus fruits for a tangy and refreshing BBQ sauce. Oranges, grapefruits, lemons, and limes are all excellent options.
  • Balance the Flavors: Achieve a harmonious flavor profile by balancing the sweetness of the citrus with savory and smoky elements. Honey, brown sugar, or maple syrup can add sweetness, while smoked paprika, chili powder, or cumin can introduce a smoky and savory dimension.
  • Use Fresh Herbs: Incorporate fresh herbs like cilantro, parsley, or basil for an extra layer of flavor and freshness. Herbs not only enhance the taste but also add vibrant color to the sauce.
  • Adjust the Consistency: Depending on your preference, you can adjust the consistency of the sauce. For a thick and rich sauce, simmer it for a longer duration. If you prefer a thinner sauce, reduce the cooking time.
  • Experiment with Different Citrus Combinations: Don't limit yourself to a single type of citrus. Experiment by combining different citrus fruits to create unique and exciting flavor combinations. For instance, try a blend of oranges, grapefruits, and limes for a complex and tangy sauce.

Conclusion:

With its vibrant flavors and versatility, summer citrus BBQ sauce is a culinary delight that can elevate any grilled or roasted dish. Whether you're a backyard barbecue enthusiast or simply enjoy experimenting with new flavors in your kitchen, this sauce is sure to impress your taste buds. Embrace the vibrant flavors of summer citrus and create a mouthwatering BBQ sauce that will make your next grilling session unforgettable.
