On many hot summer days, I can't face eating a hot meal. This salad makes a very satisfying meal without overheating the house or me! If I can't stomach the thought of cooking chicken myself for fear of heating up the house on a hot summer day, I just pick up a rotisserie chicken from my local grocer or I pick up grilled cooked chicken from Costco. With pre-cooked chicken, this recipe couldn't be easier to prepare! I've served this many times to rave reviews. I got this recipe from my mother-in-law. It's a dish she picks up from her local deli on a regular basis. If you make it at home, it's much cheaper than the deli!

1 lb cooked chicken (poached, grilled, rotisserie, doesn't matter, just cooked)
1 lb pasta (macaroni, rigatoni, use your favorite, just not spaghett)
1/2 lb green seedless grape, washed and cut in half
1/2 lb red seedless grapes, washed and cut in half
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups mayonnaise (I use Hellman's Light Mayonnaise)
1 (9 1/4 ounce) can cashew halves, and pieces (I buy Planter's salted)
2 tablespoons milk (optional, also may want to add more depending on how long the salad has been in the refrigerator)

Steps:

  • Boil 1 lb. of pasta - al dente - according to package directions (I use rigatoni). Drain after cooking and let cool.
  • While the pasta is boiling, wash and halve the grapes.
  • Dice the cooked chicken into bite sized pieces.
  • In a large bowl or serving platter, combine the cooled, drained pasta with the grapes and diced chicken. Stir in the mayonnaise. I start with one cup of mayo and add more as needed. Really, just add as much as you personally like - it may be more or less than 2 cups.
  • Stir in the Lawry's seasoning salt, onion powder and garlic powder. Again, add to your liking. You may want more or less than 1/2 teaspoon of any of these - - it's your choice, go with what you like. Frequent sampling at this point will help you decide what your preference will be so grab a fork and start sampling!
  • If the salad is too thick and rich for your liking, stir in a couple tablespoons milk to thin it out. This part is optional.
  • This salad is always much better the next day after the flavors have had a chance to meld. This is when I usually add milk to loosen it up a bit.
  • Before serving, plate or dish up the salad and sprinkle cashew pieces on top of individual servings. DO NOT put the cashew pieces on the entire salad and refrigerate - - this will cause the cashew pieces to become soft and rubbery and nobody wants that! I just set the can of cashews on the table and let guests help themselves.
  • Sit back and enjoy your sweat free cold summer salad!

4 boneless skinless chicken breast halves (4 ounces each)
1 can (14-1/2 ounces) chicken broth
6 cups torn mixed salad greens
2 cups halved fresh strawberries
CITRUS DRESSING:
1/2 cup fresh strawberries, hulled
1/3 cup orange juice
2 tablespoons canola oil
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 teaspoon sugar
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped walnuts, toasted

Steps:

  • Place chicken in a large skillet; add broth. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until a thermometer reads 170°. Drain; cover and refrigerate. In a large bowl, combine greens and sliced strawberries; refrigerate., In a blender, combine the hulled strawberries, orange juice, oil, lemon juice and lemon zest, sugar, chili powder, salt and pepper. 5 tablespoons red-wine vinegar
1 tablespoon plus 2 teaspoon fresh lemon juice
1 tablespoon Dijon mustard
2 small garlic cloves, minced
3/4 teaspoon sugar
3/4 cup extra-virgin olive oil
1/4 cup chopped chives
For radish-cucumber salad:
4 cups water
1/3 cup kosher salt
2 tablespoons sugar
4 garlic cloves, smashed
1 teaspoon black peppercorns
1 bunch radishes
4 Persian cucumbers or 1 seedless cucumber
1/2 cup packed flat-leaf parsley leaves
For chickpea salad:
1 (15-to 19-ounces) can chickpeas, rinsed and drained
1/4 cup finely chopped red onion
1 tablespoon chopped mint
For green bean salad
1 pound haricorts verts or other green beans
1/2 cup whole almonds with skin, toasted and coarsely chopped
For grilled mushrooms and chicken:
3/4 pound fresh cremini mushrooms, halved
3/4 pound fresh shiitake mushrooms, stems reserved for another use and caps halved
2 pounds skinless boneless chicken thighs
1/3 cup basil pesto
Fresh tomato salad:
2 medium tomatoes, cut into 1/2-inch-thick wedges
1/4 cup thinly sliced basil
For lettuce:
4 cups thinly sliced romaine, Bibb, and/or Boston lettuce
Equipment: a perforated grill sheet

Steps:

  • Make vinaigrette:
  • Whisk together all vinaigrette ingredients, except oil and chives, with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add oil in a slow stream, whisking until emulsified. Whisk in chives.
  • Make radish-cucumber salad:
  • Boil water with salt, sugar, garlic, and peppercorns in a 4-quart pot, uncovered, 10 minutes.
  • While brine boils, trim and halve radishes. Halve cucumbers lengthwise and cut crosswise into 1/2-inch-thick slices.
  • Remove brine from heat. Add radishes and cucumbers and let stand, uncovered, 10 minutes. Drain in a colander, discarding garlic and peppercorns. Transfer radishes and cucumbers to an ice bath to stop cooking, then drain well in colander.
  • Transfer to a large bowl and chill, uncovered, about 20 minutes.
  • Make chickpea salad:
  • Stir together chickpeas, onion, 1/4 cup vinaigrette, and salt and pepper to taste.
  • Cook green beans:
  • Cook green beans in a large pot of well-salted boiling water, uncovered, stirring occasionally, until just tender, 3 to 6 minutes. Drain. Transfer to a large ice bath to stop cooking. Drain again and pat dry.
  • Grill mushrooms and chicken:
  • Prepare grill for direct-heat cooking over hot charcoal (medium-high heat for gas); see Grilling Procedure .
  • Toss mushrooms with 2 tablespoons vinaigrette and marinate 10 minutes.
  • Grill mushrooms in 2 batches on oiled grill sheet, covered only if using a gas grill, stirring frequently, until golden-brown, about 5 minutes per batch. Toss hot mushrooms with 2 tablespoons vinaigrette.
  • Season chicken with 1/2 teaspoon each of salt and pepper. Oil grill rack, then grill chicken over medium-hot charcoal (medium heat for gas), covered only if using a gas grill, turning chicken occasionally and moving it as necessary to avoid flare-ups, until just cooked through, 8 to 10 minutes total. Transfer to a cutting board and let rest 10 minutes.
  • Cut into 1/2-inch-thick slices and toss with pesto in a large bowl.
  • Dress salads and assemble dish:
  • Toss brined cucumbers and radishes with parsley, 3 tablespoons vinaigrette, and salt and pepper to taste.
  • Stir mint into chickpea salad.
  • Toss beans with 2 tablespoons vinaigrette and salt and pepper to taste. Sprinkle with almonds.
  • Toss tomatoes with 3 tablespoons vinaigrette, basil, and salt and pepper to taste.
  • Toss lettuce with 1 tablespoon vinaigrette.
  • Arrange chicken, mushrooms, and salads side by side on a large platter and serve remaining vinaigrette on the side.

2 fresh sliced strawberries
10 dried cranberries
5 red grapes
1 ounce diced cooked chicken breast
1/2 ounce chopped cashews
1 cup red wine vinegar
1 cup canola oil
4 strawberries
1/2 teaspoon salt
1/2 cup sugar

Steps:

  • In a medium sized bowl toss the mixed greens, dressing, and chicken. Transfer into serving bowl.
  • Top salad with dried cranberries, red grapes, and sliced strawberries.

2 packages (9 oz each) frozen fully cooked chicken breast strips (not breaded), thawed (4 cups)
1 cup crumbled Gorgonzola cheese (about 4 oz)
1 cup pecan halves (4 oz)
1 quart fresh strawberries, quartered (3 cups)
1/3 cup olive or vegetable oil
2 tablespoons sugar
1/2 teaspoon salt
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, finely chopped

Steps:

  • In deep 3-quart salad bowl, place half of the lettuce. Layer with chicken, cheese, pecan halves, remaining lettuce and strawberries.
  • In small bowl or glass measuring cup, mix dressing ingredients with wire whisk until well blended. Just before serving, pour dressing over salad.

This is such a nice summer light salad which you can put either chicken, turkey, ham or just have it vegetarian style

1 pkg cooked bacon
4 cooked chicken breasts
4 Tbsp white wine vinegar
2 Tbsp balsamic vinegar
1/3 c olive oil, extra virgin
10 oz chopped baby spinach
2 c fresh chopped pineapple
1 bunch chopped green onions
1/2 c coconut, flaked
1/2 c pineapple juice
2 Tbsp sweet and spicy mustard
2 Tbsp oyster sauce
1 Tbsp cane sugar

Steps:

  • 1. Cook bacon until crisp. Dain and crumble and set on paper towel.
  • 2. Cook chicken breasts in pan till done. Season with salt and pepper. Put 1 tbsp. oyster sauce over chicken and let simmer till done
  • 3. Chop spinach, green onions and pineapple and put in bowl.
  • 4. Combine white wine vinegar, balsamic vinegar, oyster sauce, sweet and spicy mustard, olive oil, salt and pepper, cane sugar and pineapple juice in a jar and shake.
  • 5. Add coconut and toss salad ingrediants then pour over salad.

1/2 c seedless grapes
2 Tbsp chopped celery
1/3 c low calorie mayo

1 tsp curry powder
1 tsp ground ginger
1 tsp grated onion
lettuce leaves

For the viniagrette, whisk together the olive oil, orange juice and sugar until combined. Salt and pepper to taste. Toss mixed greens with vinaigrette until lightly coated. Arrange on on to different plates. Arrange the fruit, mushrooms, and feta on top of the greens. Slice the grilled chicken. Place the sliced chicken breast on both salads and enjoy.
