4 ounces butter
4 ounces sugar
1 tablespoon golden syrup
1 tablespoon milk
1/2 teaspoon baking soda
8 ounces flour
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup sultana

Steps:

  • Place first 5 ingredients in a saucepan and melt together slowly.
  • Add in the flour, salt, vanilla essence and sultanas.
  • Mix well, then place teaspoonfuls rolled into balls, on a cold ungreased tray.
  • Flatten gently with a fork and bake in a moderate oven 350'F/180'C for 10 - 15 minutes.
  • Cool on a wire rack.

1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
3/4 cup Gold Medal™ all-purpose flour

200g self-raising flour
1 tsp baking powder
1 tsp cinnamon
50g wholemeal flour
100g golden caster sugar
2 eggs
125ml semi-skimmed milk
4 tbsp sunflower oil
2 apples , grated
100g sultana

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.
  • In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
  • Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.

Tips:

  • For chewier cookies, chill the dough for at least 30 minutes before baking.
  • If you don't have a food processor, you can crush the Sultana Bran flakes in a Ziploc bag with a rolling pin.
