Tarte Au Sucre Francaise (French Canadian Sugar Pie) image

My grandmother use to make a "tarte au sucre" for every family gathering. The kids would be wired all day, lol. I have been looking for a recipe that turns out like hers for a long time now. I have tried a few, all delicious, but not quite the same. A few weeks ago, my Mom was looking through a box of stuff left behind after my grandma passed away a while back and , there it was....... Her recipe for tarte au sucre. Hope you all enjoy it as much as I do. You might want to have a glass of milk with you when you do eat it, it is extremely sweet!

Categories     Pies

Time 1h

Number Of Ingredients 8

pastry for 9-inch pie, or frozen pie crust
2 c brown sugar, firmly packed
2 Tbsp flour
salt
2 eggs
1 egg yolk (discard egg white or reserve for another use)
1 c milk
1 tsp vanilla

Steps:

  • 1. Roll out pastry and fit into 9-inch pie plate; trim and flute edges.
  • 2. In bowl, blend sugar, flour, and salt.
  • 3. In separate bowl using electric mixer, beat eggs and yolk until frothy; beat in milk and vanilla.
  • 4. Stir egg mixture into sugar mixture till smooth.
  • 5. Pour into prepared pie shell.
  • 6. Bake in 400F (205C) oven for 10 minutes; reduce to 350F (175C) and bake for about 35 minutes or till crust is golden brown and filling is set.
  • 7. Allow to cool on rack.

Tips

  • For a flaky crust, use a combination of butter and shortening. The butter will add flavor, while the shortening will help to keep the crust light and flaky.
  • Be sure to chill the dough before rolling it out. This will help to prevent the dough from shrinking in the oven.
  • When rolling out the dough, use a light touch. If you press too hard, the dough will become tough.
  • Bake the pie in a preheated oven. This will help to ensure that the crust is evenly browned.
  • If you are using a store-bought pie crust, be sure to prick the bottom of the crust with a fork before baking. This will help to prevent the crust from bubbling up.
  • Serve the pie warm with a scoop of ice cream or whipped cream.

Conclusion

Sugar pie is a classic dessert that is enjoyed by people of all ages. It is a simple pie to make, and it is a great way to use up leftover pie crust. With its sweet and creamy filling, sugar pie is a surefire hit at any gathering.
