This is from Cook's Country, America's Test Kitchen, Feb/March 2006. Don't use baby carrots in this. They won't roast properly. I liked decreasing the sugar about one-third.

Tips:

  • Choose the right carrots: Look for carrots that are about the same size so that they cook evenly and have a similar texture.
  • Peel and trim the carrots: Peeling the carrots is not necessary, but it will give them a more polished look. Trim the ends of the carrots where the root was attached.
  • Cut the carrots into uniform pieces: Cut the carrots into quarters or halves lengthwise, depending on their size. This will help them cook evenly.
  • Toss the carrots with olive oil, salt, and pepper: This will help the carrots caramelize and develop flavor as they roast.
  • Roast the carrots at a high temperature: Roasting the carrots at a high temperature will help them caramelize and develop a crispy texture.
  • Stir the carrots halfway through cooking: This will help ensure that they cook evenly.
  • Make the sugar glaze: While the carrots are roasting, make the sugar glaze by combining butter, brown sugar, and maple syrup in a saucepan. Bring the mixture to a simmer and cook until it has thickened.
  • Glaze the carrots: Once the carrots are roasted, remove them from the oven and immediately brush them with the sugar glaze. This will give them a sweet and shiny coating.
