It is almost strawberry time......this pie is so good, you will like it even if you aren't diabetic! I made this for a fundraiser recently and it was a big hit!

Number Of Ingredients 7

1 baked 9 inch pie shell
1 1/2 cups water
2 tablespoons cornstarch
1 package sugar-free strawberry gelatin
6 tablespoons Splenda sugar substitute or 4 packets Equal sugar substitute (I prefer to use Splenda)
3 cups sliced strawberries
1 (8 ounce) container Cool Whip or 1 package dream whipped topping (Kraft)

Steps:

  • In a small saucepan mix water and cornstarch with a wire whisk.
  • Bring to a boil, stirring constantly, for 1 minute.
  • Remove from heat, cool slightly.
  • Stir in gelatin and sweetener.
  • Mix well, and gently stir in strawbrries.
  • Pour into baked pie shell and refrigerate for about 2 hours.
  • Top with Cool Whip OR Dream Whip right before serving.
  • Garnish with strawberies if desired.

This is an alternative to my sugar free Key Lime Pie. I exchanged the lime jello, for strawberry, and the lime juice with strawberry flavoring. I think it turned out well.

1/4 c water
1 pkg sugar free strawberry jello 4.5oz
8 oz cream cheese (softened)
1 tsp strawberry flavoring
8 oz frozen sugar free, or lite whipped topping, i used cool whip. thawed
1 graham cracker pie crust

Steps:

  • 1. microwave water on high for 45 secs up to 1 1/2 mins. until boiling. Whisk in gelatin until dissolved.
  • 2. In a large bowl mix gelatin mixture and cream cheese until blended well. Add strawberry flavoring to this also.
  • 3. Fold in Cool Whip, spread in crust and refrigerate until set. About 1 hour. Garnish with strawberries and Cool Whip.

1 pie shell, baked
1 (3 ounce) package sugar-free strawberry gelatin
1 (3 1/2 ounce) package sugar-free vanilla pudding (cooked type)
2 1/2 cups cold water
1 quart strawberry, washed and hulled

Steps:

  • In a saucepan, mix dry pudding and gelatin water.
  • Stir over medium heat until mixture comes to a boil.
  • Remove from heat.
  • Cool until slightly thickened.
  • Arrange strawberries in pie shell (whole or sliced).
  • Pour cooled mixture over berries.
  • Refrigerate until set.

3 oz gelatin (sweetened with or without sugar)
10 oz frozen and/or strawberries (sweetened or unsweetened)
2 c minature marshmellows
1 c heavy whipping cream, whipped
1 graham cracker pie crust (or chocolate pie crust)

Steps:

  • 1. Dissolve a 3 ounce package of gelatin in one cup of boiling water. For your needs and likes, choose to use gelatin sweetened with sugar, or sugar-free (sweetened with Splenda or other artificial sweetener.)
  • 2. Add 10 ounce of frozen strawberries or a combination of fresh and frozen. You can use sweetened or unsweetened. If you use fresh strawberries, don't sweeten. Stir well until the strawberries separate (if frozen) and gelatin mixture thickens.
  • 3. Fold in 2 cups of mini marshmallows. NOTE: If a diabetic, you may need to do an exchange for the marshmallows. If using the sugar-free gelatin, they are the only ingredient that contains sugar (and there would be a smidgen in the cookie crust.) If you didn't want to use a bought crust that contains sugar -you can easily make your own crust without any sugar or sweetener. You be the judge on what you can and can't have.
  • 4. Fold in 1 cup of whipped heavy (whipping) cream.
  • 5. Pour into a 9-inch cookie crust -graham or chocolate cookie.
  • 6. Decorate with sliced fresh strawberries, if desired. Chill until firm.
  • 7. Enjoy a slice of strawberry marshmallow pie! Yummy! Yummy!

I love love love this pie, a weight loss buddy of mine gave me this recipe several years ago when the old point system was in affect and the WHOLE pie was 6 points; I haven't figured the new points out but it fits the bill for a sow fat, low sugar low carb dessert that taste great.

1 pkg (1.1oz.) sugar-free cook and serve vanilla pudding
2 c water
1 pkg (.3oz) sugar free strawberry jello
3 c strawberries sliced

Steps:

  • 1. In a medium saucepan, stir together water and pudding mix. Heat to a boil. Remove from heat and immediately add the jello. Stir until dissolved. Set the pan aside and let the mixture cool to room temperature.
  • 2. Place strawberries in the bottom of a deep dish pie plate. Pour cooled pudding mixture over the strawberries. Refrigerate until chilled. Let set well before slicing.
  • 3. Note: I have made this with rasberry jello or chocolate pudding or even with lemon jello, it's fun to experiment with the flavors of jello, fruit, and pudding but pudding MUST be cook and serve.
