1 cup Splenda granular, no calorie artificial sweetener
1 tablespoon arrowroot or 1 tablespoon cornstarch
1 teaspoon ground nutmeg
7 egg yolks
4 cups milk
2 cups fat-free half-and-half
2 tablespoons vanilla extract

Steps:

  • Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
  • Mix together first 3 ingredients in a large heavy saucepan. Set aside.
  • Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.
  • Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.
  • Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.
  • 15 servings. Prep time : 20 minutes, cooking time: 5-10 minutes.

1 (1 ounce) package sugar-free instant vanilla pudding mix
7 cups nonfat milk, divided or 7 cups low-fat milk
1 pinch nutmeg (optional)
2 teaspoons vanilla or 2 teaspoons rum extract
sugar substitute (to taste)
1 cup fat-free evaporated milk

Steps:

  • In a bowl combine the pudding mix with 2 cups fat-free milk, tiny pinch nutmeg (if using) vanilla or rum extract and sugar substitute (to taste) mix on low speed using an electric mixture until thickened (adjust the sugar substitute to taste if needed).
  • Pour into a large container with a tight-fitting lid; add in 3 cups milk, cover with lid and shake vigorously.
  • Add in evaporated milk with remaining 2 cups milk and shake well again.
  • Chill and shake again before using.
  • Delicious!

1/2 cup half-and-half cream
1/2 cup Egg Beaters egg substitute (or egg substitute)
1 -2 tablespoon sugar-free instant vanilla pudding mix
nutmeg
cinnamon
non-dairy whipped topping (optional)

Steps:

  • Mix milk, egg substitute and pudding together, adding a dash of spices.
  • For extra decadance, I add French Vanilla whip cream!
  • When drink is frothy, either pour into a cup, add another dash of nutmeg and enjoy,.
  • or refrigerate until cold.
  • I like to use an immersion blender to mix ("boat motor").
  • I also like to add hot chocolate mix to my egg nog, so I'll bet that chocolate pudding would be yummy too.
  • Be careful if heating for a hot drink - the eggs get a little curdled.
  • "Cook time" is chill time.

1 dash ground cinnamon
1 whole clove
1 dash ground nutmeg
2 egg yolks
¼ cup granular sucralose sweetener (such as Splenda®)
2 tablespoons canned pumpkin puree

Steps:

  • Pour half-and-half into a microwave-safe measuring cup. Add cinnamon, clove, and nutmeg. Heat in the microwave for 1 minute. Stir. Microwave for 1 minute more.
  • Mix eggs yolks in a bowl using a fork; add sucralose sweetener. Add 1 teaspoon of the half-and-half mixture to the egg yolk mixture. Repeat until all half-and-half has been incorporated. Remove clove and discard. Add pumpkin puree and pour eggnog back into measuring cup.
