This recipe has been a big hit at family gatherings and potlucks for years! It could also be used as a light dessert. I have also used French Vanilla pudding mix. It makes a large amount so make sure to use a very large mixing bowl.

2 (3 ounce) packages instant vanilla pudding
1 (3 ounce) package orange Jell-O
1 1/2 cups boiling water
1 (22 ounce) can mandarin oranges (with juice)
1 (16 ounce) container Cool Whip

Steps:

  • Combine the pudding, Jello and boiling water and dissolve completely.
  • Add the Mandarin Oranges (with juice).
  • Fold in the Cool Whip.

3 oz sugar free orange jello
3 oz sugar free instant vanilla pudding
10 oz mandarin oranges, drained
8 oz fat free cool whip, thawed

Steps:

  • 1. Dissolve Jello in 1 cup boiling water. Add 1/2 cup cold water (or juice from oranges.) Let sit in fridge 20 minutes. Whisk in dry pudding mix and beat until smooth. Fold in oranges and cool whip. Refrigerate.

This is my delicious lightened up version of a dreamsicle salad, a cool and creamy orange fluff with slightly tart, juicy mandarin orange segments and little bits of soft, sweet marshmallows. If you didn't know better, you'd probably think it has lots of sugar, but it doesn't. The only sugar is in the marshmallows. Please note that the orange segments may be halved or left whole according to your preference.

1 package(s) sugar-free orange gelatin, .3 oz.
1 cup(s) boiling water
1/2 cup(s) ice cold water
1 package(s) sugar-free instant vanilla pudding, 1.34 oz
1 - container lite whipped topping, 8 oz. thawed
1 1/2 cup(s) mini marshmallows or regular size cut into smaller pieces
1 can(s) mandarin orange segments, drained (15 oz.)

Steps:

  • In a large bowl, combine 1 package sugar-free orange gelatin and 1 cup boiling water; whisk until gelatin is completely dissolved.
  • Add 1/2 cup ice cold water; stir.
  • Place in refrigerator and let chill for 15 minutes. (Set your timer.)
  • After mixture has chilled for 15 minutes, remove from refrigerator and slowly whisk in 1 package of instant sugar-free vanilla pudding until smooth.
  • Refrigerate for another 15 minutes, until slightly thickened. (Set timer.)
  • Use a spatula or large spoon to fold in the lite whipped topping, then the marshmallows and the mandarin oranges.
  • May be served immediately, but better if refrigerated for a couple of hours or even overnight. Lightly fold/stir again before serving. Cover and refrigerate leftovers.

Tips:

  • Use ripe fruit for the best flavor.
  • If you don't have any sugar-free pudding mix, you can make your own by combining 1/2 cup of unsweetened almond milk, 1/4 cup of cornstarch, 1/4 cup of erythritol, and 1 teaspoon of vanilla extract in a saucepan. Bring to a simmer over medium heat, stirring constantly. Once thickened, remove from heat and let cool.
  • If you're using frozen fruit, thaw it before using.
  • Top with whipped cream or a dollop of yogurt for a more decadent dessert.
