1 cup all-purpose flour
1 cup finely chopped walnuts
1/2 cup butter, softened
1/4 cup packed brown sugar
FILLING:
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1/4 teaspoon almond extract
1/2 cup heavy whipping cream, whipped
1 can (21 ounces) cherry pie filling

Steps:

  • In a small bowl, combine the flour, walnuts, butter and brown sugar. Transfer to a 13-in. x 9-in. baking pan. Bake at 375° for 15 minutes, stirring once. Set aside 1 cup of crumbs. While warm, press the remaining crumbs into a greased 9-in. pie plate, firmly pressing onto the bottom and up the sides. Chill for 30 minutes., In a small bowl, beat the cream cheese, confectioners' sugar and almond extract until smooth. Spread over bottom of crust. Gently fold whipped cream into the pie filling; spread over cream cheese layer. Sprinkle with reserved crumbs. Chill for at least 4 hours before serving.

5 cups of fresh cherries, whole (about 2.5 pounds)
zest from one large lemon (about 1 tablespoon or a little more)
juice from one large lemon (about 3 to 4 tablespoons)
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/4 cup keto confectioners sweetener
1/2 teaspoon xanthan gum
1 1/2 cups almond flour
1/4 cup butter melted
1/4 cup keto confectioners sweetener

Steps:

  • Cut the cherries in half and remove the pits.
  • Place the cherries, lemon zest, lemon juice, salt, almond extract, vanilla extract, and keto confectioners sweetener in a medium-sized saucepan over medium-high heat. Stir to combine.
  • Continue to stir every few minutes until the cherries start to boil, reduce heat to medium-low and continue to simmer for 15-20 minutes until the cherries are broken down.

2 (1 lb) bags frozen dark sweet cherries, unsweetened, thawed
1/4 cup quick-cooking tapioca
1/2 cup frozen apple cherry juice concentrate, 100% juice
1/2 cup water
1 teaspoon almond extract
3 tablespoons butter (optional)
cinnamon (optional)

Steps:

  • Place thawed, undrained cherries with juice concentrate, water and almond extract in a bowl and sprinkle with tapioca. Stir together and let stand for 15 minutes.
