SUGAR FREE CAKE FROSTING

I love this! Fast, easy, simple. It is not overly sweet or heavy like most cake frostings. My co-worker asks for a bowl of just this frosting for her birthday. She dips vanilla wafers or Oreo cookies into it.

Time 5m

Yield 1 cake worth, 10 serving(s)

Number Of Ingredients 3

1 (8 ounce) box sugar-free instant pudding mix
1 (12 ounce) container frozen whipped topping, thawed
2 tablespoons milk

Steps:

  • Pick your favorite flavor of sugar free instant pudding mix.
  • YOU MUST DO THIS! Take 2 tablespoons of milk and dissolve the pudding mix into it before adding the Cool Whip by folding it in gently. (This will get rid of any graininess). WARNING! If you over mix this, the frosting will become grainy or sticky!
  • Fold into the thawed whip topping.
  • Spread on cake or dip cookies, fruit or spoon now and eat!
  • Keep leftovers refrigerated.
  • My aunt has added drained pineapple or mandarin oranges and coconut into the frosting after step 2 (they are folded into the Cool Whip with the pudding/milk mixture).

ABSOLUTELY SUGAR FREE FROSTING

Absolutely Sugar Free Frosting image

This is so simple and so good, not just as frosting either!! I am a recently diagnosed diabetic with a gigantic sweet tooth, so I am always looking for goodies. I was sitting around bored and craving something sweet one day and this is what happened. This is pretty low in carbs too-- which is great for diabetics as well as low carb dieters. But beware, it is NOT low in fat!! This recipe makes a bunch, but I am pretty sure it can be reduced by parts. The serving number is a guess-- it depends on what you use this for.

Time 10m

Yield 12-20 serving(s)

Number Of Ingredients 3

2 (1 ounce) boxes sugar-free instant pudding mix (any flavor)
1 cup skim milk
3 cups heavy whipping cream

Steps:

  • Put all ingredients in a mixing bowl. Using electric mixer at low speed, mix til pudding is dissolved. Increase speed and whip until it is spreading consistency.

Tips:

  • Prep All Ingredients: Before starting, ensure all ingredients are at room temperature, especially the butter. This helps the ingredients combine smoothly.
  • Use Unsalted Butter: Using unsalted butter allows you to control the saltiness of the frosting. Adding a pinch of salt can enhance the flavor.
  • Powdered Sweetener: Use a powdered sweetener to achieve a smooth and creamy texture. Regular granulated sugar will not dissolve properly and may result in a gritty frosting.
  • Cream the Butter: Cream the butter until light and fluffy. This incorporates air, making the frosting lighter and airier.
  • Add Sweetener Gradually: Gradually add the powdered sweetener to the creamed butter. This helps prevent the frosting from becoming too stiff or runny.
  • Use Fresh Lemon Juice: Fresh lemon juice adds a bright and tangy flavor to the frosting. Bottled lemon juice may have a more artificial taste.
  • Chill the Frosting: If the frosting is too soft, chill it for 15-20 minutes before using. This will make it easier to spread and pipe.

Conclusion:

This sugar-free cake frosting is a delicious and versatile option for those seeking a healthier alternative to traditional sugary frostings. Made with wholesome ingredients like butter, cream cheese, powdered sweetener, and lemon juice, this frosting is not only guilt-free but also packed with flavor. Whether you're looking to top off your favorite cake, cupcakes, or cookies, this frosting will surely be a hit among your family and friends. So, whip up a batch and indulge in a sweet treat without compromising your health goals.
