INDIANA SUGAR CREAM PIE

Indiana Sugar Cream Pie image

Also known as Hoosier pie, this regional specialty pairs a buttery crust with a rich vanilla custard filling. Martha made this recipe on "Martha Bakes" episode 713.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Yield Makes one 9-inch pie

Number Of Ingredients 11

2 1/2 cups unbleached all-purpose flour
1 teaspoon kosher salt
1 teaspoon sugar
2 sticks (1 cup) cold unsalted butter, cut into small pieces
1/4 to 1/2 cup ice water
1/3 cup unbleached all-purpose flour, plus more for work surface
1/2 stick (4 tablespoons) unsalted butter
1 cup whole milk
1 cup heavy cream
1 cup sugar
1 teaspoon pure vanilla extract

Steps:

  • Make the Pate Brisee: Pulse flour, salt, and sugar in a food processor (or whisk together by hand in a bowl). Add butter and pulse (or quickly cut in with a pastry blender or your fingertips) until mixture resembles coarse meal, with some larger pieces remaining. Drizzle 1/4 cup water over mixture. Pulse (or mix with a fork) until mixture just begins to hold together. If dough is too dry, add 1/4 cup more water, 1 tablespoon at a time, and pulse (or mix with a fork).
  • Divide dough in half onto two pieces of plastic wrap. Gather into two balls, wrap loosely in plastic, and press each into a disk using a rolling pin. Refrigerate until firm, well wrapped in plastic, 1 hour or up to 1 day. Dough can be frozen up to 3 months; thaw in refrigerator before using.
  • Make the pie: On a lightly floured surface, roll out 1 disk pate brisee to a 13-inch round, about 1/8 inch thick. (Reserve remaining disk for another use.) Fit dough into a 9-inch pie dish and press into bottom edges and up the sides. Trim edge, leaving a 1-inch overhang; fold edge under and crimp as desired. Freeze 15 minutes.
  • Preheat the oven to 375 degrees with the rack located in the lower third. Line crust with parchment paper, gently pressing the parchment into the edges of the crust; weigh down parchment with dried beans or pie weights.
  • Bake until the edges of the pastry begin to turn golden, about 25 minutes. Carefully remove pie weights and parchment paper. Continue to bake until crust is golden brown in color, about 15 minutes more. Transfer the crust to a wire rack to cool slightly.
  • Melt butter in a medium saucepan. Add flour and cook, whisking, over medium heat for 2 minutes (do not let flour darken). Whisk in milk, cream, sugar, and vanilla. Bring to a boil; reduce heat to medium-low and simmer until thickened, 5 to 7 minutes. Strain mixture into cooled crust and bake until filling is slightly set, about 25 minutes. Let cool completely on a wire rack before serving.

EASY AMISH SUGAR CREAM PIE

Easy Amish Sugar Cream Pie image

Sweet and creamy, this rich Amish pie may have a slightly softer texture than the typical custard pies you are used to. It also has a bit of a unique flavor, which almost tastes like brown sugar.

HOOSIER SUGAR CREAM PIE

Hoosier Sugar Cream Pie image

Provided by Food Network

Categories     dessert

Time 1h30m

Yield 12 servings

Number Of Ingredients 11

1 tablespoon red wine vinegar
1 cup plus 3 tablespoons all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 teaspoons granulated sugar
7 tablespoons unsalted butter, cut into 1-inch cubes; 4 tablespoons chilled, 3 tablespoons frozen for 15 minutes
1/2 cup granulated sugar
1/2 cup packed dark brown sugar
2 tablespoons all-purpose flour
2 cups heavy cream
1/2 teaspoon vanilla paste or extract
Confectioners' sugar, for dusting

Steps:

  • Prepare the crust: Combine the vinegar with 1/2 cup ice water in a small bowl.
  • Pulse the flour, salt and sugar in a food processor until combined. Add the 4 tablespoons chilled butter and pulse until the butter is in pea-sized clumps and the mixture is sandy. Add the 3 tablespoons frozen butter; pulse until the frozen butter is also in pea-sized clumps. Add 5 tablespoons of the vinegar mixture; pulse 2 or 3 more times. Squeeze a small amount of dough between your fingers. If it does not stay together easily, add 1 more tablespoon of the vinegar mixture and pulse 3 or 4 more times. (Do not let the dough come together.) Turn the dough out onto a clean surface and gather into a lumpy ball; flatten into a disk, wrap in plastic and refrigerate at least 1 hour or overnight.
  • On a floured surface, roll the dough into a 12-inch circle, about -inch thick. Fit into an 8-inch pie plate and trim the extra dough, leaving a 1-inch overhang; reserve trimmings. Fold the edges under the rim and crimp. Refrigerate the crust until firm, 20 minutes. Meanwhile, preheat the oven to 400 degrees.
  • Line the chilled crust with foil and fill with pie weights or dry beans. Bake until the edges are golden, 15 minutes. Remove the foil and weights; continue baking until the center of the crust is dry and golden brown, about 12 minutes. Cool slightly on a wire rack. Cover any cracks in the crust with the dough trimmings before filling.
  • Prepare the filling: Whisk the sugars and the flour in a medium bowl, breaking up any clumps of brown sugar. Combine the heavy cream and vanilla in a separate bowl and slowly whisk into the sugar mixture until smooth. Pour the filling into the prepared crust; bake until the pie begins to set around the edge but is still slightly wobbly in the middle, 40 minutes. (Tent loosely with foil for the last 10 minutes if the crust gets too dark.) Cool to room temperature on a wire rack, then refrigerate until ready to serve. Dust with confectioners' sugar before slicing.

MICROWAVE SUGAR CREAM PIE

Microwave Sugar Cream Pie image

This recipe was the grand prize winner a few years ago in a recipe contest held by an area newspaper. I love sugar cream pie, but didn't have an easy recipe until I found this one. I used a store bought pie shell, and ended up with more filling than the shell would hold so we ate the leftover filling like pudding.

Provided by Jennifer

Categories     Pie

Time 15m

Yield 1 pie

Number Of Ingredients 7

3 cups half-and-half
1 1/2 cups sugar
4 tablespoons melted butter
1/3 teaspoon salt
6 tablespoons flour
1 teaspoon vanilla
1 baked 9 inch pie shell

Steps:

  • In a large bowl, combine sugar, flour and salt.
  • Gradually stir in the half and half, then the melted butter.
  • Place bowl in microwave.
  • Cook mixture on high power, stopping to stir every 1 minute and 30 seconds, for a total of ten minutes cooking time.
  • Note: It is very important to stop and stir the mixture.
  • Finally, add vanilla and microwave for an additional 30 seconds or until mixture is bubbly.
  • Pour filling into a 9- inch pie shell.
  • Sprinkle with cinnamon, if desired.
  • Allow pie to cool completely before cutting.

Tips:

  • To make sure the pie crust is flaky, use a pastry blender or two knives to cut the butter into the flour until it resembles coarse crumbs. The butter should be cold, straight from the fridge, to achieve this consistency.
  • It's crucial to keep the pie dough chilled throughout the entire process. Chilling the dough helps prevent the gluten from developing too much, resulting in a more tender and flaky crust.
  • When rolling out the pie dough, make sure to do it on a lightly floured surface to prevent sticking. Also, roll the dough from the center outward, rotating the dough a quarter turn with each roll, to ensure an even thickness.
  • Use parchment paper or a silicone baking mat when pre-baking the pie crust to catch any butter or juices that may leak out. This will help keep the bottom of the pie crust from getting soggy.
  • Letting the filling cool slightly before pouring it into the pie crust helps prevent the crust from cracking or bubbling due to the sudden temperature change.
  • To achieve a perfectly smooth filling, strain it through a fine-mesh sieve before pouring it into the pie crust. This will remove any lumps or grainy bits.
  • Bake the pie in a preheated oven to ensure even cooking. The oven temperature and baking time will vary depending on the recipe, so be sure to follow the instructions carefully.
  • Allow the pie to cool completely before slicing and serving. This will give the filling time to set and firm up, resulting in clean, neat slices.

Conclusion:

Sugar cream pie is a delicious and classic American dessert that's perfect for any occasion. With its creamy, custard-like filling and flaky, buttery crust, this pie is sure to be a crowd-pleaser. While the recipe may seem daunting at first, it's actually quite simple to make and can be easily customized to your liking. So, whether you're a seasoned baker or just starting out, give this sugar cream pie recipe a try and enjoy a taste of homemade goodness.
