Time 2h

Yield 2 dozen

Number Of Ingredients 9

1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup packed light brown sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (see Cook's Note)
1 tablespoon plus 1 teaspoon pumpkin spice mix
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup granulated sugar

Steps:

  • Place the butter and brown sugar in a stand mixer fitted with a paddle attachment. Beat until fluffy, about 2 minutes. Add in the egg and vanilla. Beat until just combined.
  • Whisk together the flour, 1 tablespoon of the pumpkin spice mix, the baking powder and salt in a large bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining half of the dry ingredients until a thick dough comes together. Chill for at least 1 hour or overnight.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Combine the granulated sugar with the remaining 1 teaspoon pumpkin spice mix in a small bowl.
  • Shape the cookie dough using a heaping tablespoon and roll between your palms to form a round ball. Repeat until all the dough is rolled into balls. Place the balls into the spiced sugar and toss until completely coated. Place onto the prepared baking sheets, leaving about 2 inches of space between each cookie. Use your palms or the tines of a fork to press the cookies into thick disks.
  • Bake until golden brown, 10 to 12 minutes.

Tips:

  • To make the sugar cookie dough, cream together the butter and sugar until light and fluffy. Gradually beat in the eggs one at a time, then stir in the vanilla extract.
  • Add the dry ingredients to the wet ingredients a little at a time, mixing until just combined. Do not overmix, or the cookies will be tough.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • When baking the cookies, place them on a parchment paper-lined baking sheet. This will help prevent them from sticking to the pan.
  • Bake the cookies at 350 degrees Fahrenheit (175 degrees Celsius) for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once the cookies are completely cool, you can decorate them as desired. You can use royal icing, sprinkles, candy melts, or other decorations to create your own unique scarecrow and pumpkin cookies.

Conclusion:

These sugar cookie scarecrow and pumpkin cookies are a fun and festive way to celebrate Halloween. They are easy to make and can be decorated in a variety of ways to suit your own personal style. With a little creativity, you can create scarecrow and pumpkin cookies that are sure to impress your friends and family.
