8 oz package of cream cheese ((softened))
1/2 cup powdered sugar
2 tablespoons heavy whipping cream
Fruit toppings (fresh strawberries, fresh blueberries, kiwi and clementines)

Steps:

  • Preheat oven to 325.
  • Grease a pizza pan with nonstick cooking spray. Spread dough into prepared pan. I like to put my hand into a sandwich bag and spray the bag with cooking spray and press the dough into the pan. You may need to add additional cooking spray to the bag on your hand as you spread the dough.
  • Bake for 10-12 minutes or until golden brown and center is set. Cool completely.
  • Beat cream cheese, sugar and cream together until smooth with a hand mixer. Spread onto cookie. Top with sliced strawberries, blueberries, sliced kiwi and orange sections. Refrigerate until ready to serve. Cut into pizza size slices and serve.

1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar

2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained

1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon freshly grated lemon zest
1 teaspoon pure vanilla extract
1 large egg

1/4 teaspoon fine salt
8 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1 tablespoon honey
1 teaspoon pure vanilla extract
2 cups confectioners' sugar, sifted, plus more for dusting
4 to 5 cups mixed fresh summer fruit, such as whole raspberries, blackberries and blueberries, quartered strawberries and sliced stone fruit

Steps:

  • For the sugar cookie crust: Preheat the oven to 350 degrees F.
  • Beat the granulated sugar and butter in a large bowl with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Add the lemon zest, vanilla and egg and beat until incorporated. Add the flour, baking powder and salt and mix on low speed until just combined. Scrape the dough into a large (12-inch) nonstick skillet and press into an even layer to cover the entire bottom of the skillet.   • For the topping: Clean out the mixer bowl and add the cream cheese and butter. Beat on medium speed until light and smooth, about 1 minute. Add the honey and vanilla and beat to combine. Add the confectioner's sugar and beat on low speed until just combined. Increase the speed to high and beat until fluffy, 1 to 2 minutes. 1/3 cup granulated sugar
1 teaspoon vanilla, I use mexican vanilla
2 tablespoons pineapple juice, reserved from can
2 -16 ounces refrigerated sugar cookie dough, you can use 1 pk. if making a round pizza shape, I always use a jelly roll pan
11 ounces mandarin oranges, drained well
17 ounces pineapple, drained well reserve juice
fresh strawberries
kiwi fruit

  • Lightly spray jelly roll pan with cooking spray.
  • Press cookie dough in pan evenly, I use a small rolling pin.
  • Bake as directed on package, or until golden brown and set aside to cool completely.
  • In a mixer beat cream cheese until smooth (if you do not beat first it will be lumpy), add sugar and mix well, add vanilla and pineapple juice.
  • Spread cream cheese mix evenly over cooled cookie crust.
