2 pounds sweet potatoes, peeled, quartered, and cut into 1-inch pieces
1 cup canned reduced-sodium chicken broth or water
1/2 cup packed brown sugar
2 tablespoons fresh lime juice
Coarse salt and ground pepper
2 tablespoons unsalted butter
1/4 teaspoon cayenne pepper

Steps:

3 tablespoons olive oil
2 teaspoons packed brown sugar
1 ½ tablespoons paprika
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon poultry seasoning
½ teaspoon chili powder
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the sweet potato chunks into a large mixing bowl. 1 1/2 to 2 canned chipotle chiles in adobo sauce*, minced and mashed to a paste (about 1 tablespoon)
3 tablespoons unsalted butter, cut into pieces and softened
1 teaspoon maple sugar
Salt
Freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F. and line a baking sheet with foil. Prick potatoes with a fork and bake in middle of oven 1 to 1 1/2 hours, or until very soft. Cool potatoes until they can be handled and scoop flesh into a bowl. With an electric mixer beat potatoes with chili paste, butter, sugar, and salt and pepper, to taste, just until smooth and spread in a buttered 2-quart shallow baking dish.
