32 medium prawns
4-5 tbsp soy sauce
3 tbsp fish sauce
2 cloves garlic (grated)
2 springs coriander fresh, chopped
1 spring onion (finely chopped)
1 lemon (juice)
1 lime (juice)
2 tsp honey or brown sugar
1 tbsp ginger (grated)
1 tbsp sriracha sauce
1 tbsp basil fresh, finely chopped
1 pinch black pepper
1 tbsp sesame oil

Steps:

  • 1. Clean and wash the prawns and place in a plastic zip-bag.
  • 2. Mix all the ingredients for the marinade and pour over on the prawns.
  • 3. Zip the bag and place in the fridge remembering every now and again to toss the prawns around. You can prepare this 2 to 3 hours in advance but make sure they spend at least one hour in this marinade for best results.
  • 4. Prepare the barbecue and when ready, barbecue them (depending on how strong heat is) for about 2-4 min on each side.
  • 5. Eat them on Thai steamed rice or soba noodles with a beautiful exotic salads.

1/2 cup butter, melted
1/4 cup olive oil
1/4 cup minced fresh herb (, Parsley,Thyme,oregano etc.)
3 tablespoons fresh lemon juice
4 garlic cloves, crushed
1 tablespoon minced shallot
salt and pepper
1 kg medium size prawns
1 lettuce

Steps:

  • Combine butter, oil, herbs, lemon juice, garlic, shallots, salt and pepper in a mixing bowl.
  • Mix in shrimp.
  • Marinate at room temperature 1 hour.
  • stirring occasionally.
  • Prepare barbecue on medium heat.
  • Thread prawns on narrow skewers.
  • Grill until just opaque, about 2 minutes per side.
  • Arrange cups of letuce on a platter and then place the skewers on the platter.
  • Garnish with lemon and serve.

1kg large raw tiger prawn , heads removed, but unpeeled
1 large garlic clove
1 small bunch coriander , roughly chopped
1 red chilli , deseeded and chopped
juice 1 lime , plus wedges to serve
200g butter , softened

Steps:

  • To make the butter, put the garlic, coriander, chilli and lime juice in a food processor and pulse until chopped but not sludgy. Remove 1 tbsp of the mix, toss with the prawns and set aside in the fridge. Add the butter and some seasoning to the food processor, and pulse again until everything is combined. Scrape out onto a sheet of foil, roll into a sausage and put in the freezer to harden.
  • Fire up the barbecue. When the coals have just turned white, cook the prawns for 3-4 mins on each side until they turn pink. Lift them off the barbecue onto a platter and, while still sizzling hot, melt thin slices of about half the butter over the prawns. Melt the remaining butter and serve with the prawns to dip into, and lime wedges for squeezing over.
