COPYCAT SUBWAY GOLDEN CREAMY BROCCOLI SOUP

Copycat Subway Golden Creamy Broccoli Soup image

I have fallen in love with the Subway golden broccoli soup. However I found that it was high in fat. I found a recipe of a copy cat on the internet and tweaked to fit my low fat/ calorie lifestyle. 2/16/10 I tried making this soup again this time I didn't use preshredded reduced fat cheese. I grated my own using cracker barrell 2% sharp chedder. This made a huge difference the cheese integrated nicely and the soup was smooth.

Tips:

  • Use fresh broccoli. Fresh broccoli has a better flavor and texture than frozen broccoli. If you must use frozen broccoli, thaw it completely before using.
  • Don't overcook the broccoli. Broccoli should be cooked until it is tender-crisp, but not mushy. Overcooked broccoli will lose its flavor and nutrients.
  • Use a good quality cheese. The type of cheese you use will greatly affect the flavor of the soup. I recommend using a sharp cheddar cheese or a combination of cheddar and Parmesan cheese.
  • Season the soup to taste. Salt and pepper are essential seasonings for this soup, but you can also add other spices, such as garlic powder, onion powder, or paprika.
  • Serve the soup with your favorite toppings. Some popular toppings for broccoli cheese soup include croutons, bacon bits, and shredded cheese.

Conclusion:

This copycat Subway's Golden Broccoli Cheese Soup is a delicious and easy-to-make soup that is perfect for a cold winter day. It is made with fresh broccoli, sharp cheddar cheese, and a creamy broth. The soup is seasoned with garlic powder, onion powder, and salt and pepper. It is served with your favorite toppings, such as croutons, bacon bits, and shredded cheese.
