12 ounces fresh mozzarella cheese
Kosher salt and freshly ground black pepper
2 large ripe tomatoes (about 1 pound)
8 slices good sourdough bread
1 clove garlic
1 tablespoon extra-virgin olive oil
A handful of fresh basil leaves
1/4 pound thinly sliced deli ham
1/4 pound thinly sliced salami

Steps:

  • Heat a stovetop grill pan or a broiler to high heat.
  • Slice the cheese about 1/4 inch thick and season with salt and pepper. Core the tomatoes, slice crosswise the same thickness as the cheese and season with salt and pepper.
  • Grill or broil the slices of bread, turning as needed, until evenly toasted, about 1 minute. Lightly smash the garlic. Rub 1 side of each slice of bread with the garlic and drizzle with the olive oil. Roughly tear the basil leaves. Layer the mozzarella, basil, tomatoes, ham and salami on 4 slices of bread and top with the remaining bread.

1 to 2 hard rolls, cubed
1 medium tomato, chopped
1/2 cup thinly sliced red onion

2 ounces each ham, turkey and salami, julienned
1/2 cup sliced pepperoni
DRESSING:
1/3 cup canola oil
2 tablespoons tarragon vinegar
1/4 to 1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon garlic powder
Dash pepper

Steps:

3 tablespoons red wine vinegar

Four 6-inch ciabatta rolls
1/2 teaspoon dried oregano
1/4 pound thinly sliced prosciutto
1/4 pound thinly sliced capicola (preferably hot)
4 ounces thinly sliced Genoa salami
1/3 pound thinly sliced provolone
2 plum tomatoes, very thinly sliced
1 1/2 cups shredded lettuce
1/2 red onion, very thinly sliced
4 pickled pepperoncini, thinly sliced

Steps:

  • Stir together the oil, vinegar and salt and pepper to taste.

Olive oil, to taste
Red-wine vinegar, to taste
Coarse salt and freshly ground black pepper, to taste
Dried oregano, to taste
1 (3-foot) loaf Italian bread with sesame seeds
1 cup best-quality mayonnaise
3/4 pound oven-roasted turkey, thinly sliced
3/4 pound baked ham, thinly sliced
3/4 pound Genoa salami, thinly sliced
3/4 pound soppressata salami, thinly sliced
3/4 pound provolone cheese, thinly sliced
4 large vine-ripened tomatoes, thinly sliced
24 mini baseball pennants, or toothpicks

Steps:

  • Put shredded lettuce in a bowl, and drizzle lightly with oil and vinegar; season with salt, pepper, and oregano.
  • Using a sharp, serrated knife, cut bread in half lengthwise. With your hands, pull out the soft center from the bread. Using a spatula, spread mayonnaise evenly over each bread half.

3/4 cup fresh basil leaves, torn
1/2 cup sliced pitted Cerignola olives (black and green)
1/2 cup chopped jarred Peppadew peppers
1 large head romaine lettuce, shredded
2 ounces sliced mortadella, cut into thin strips
2 ounces sliced prosciutto, cut into thin strips
1 ounce sliced capicola, cut into thin strips
1 ounce sliced Genoa salami or hot soppressata, cut into thin strips
1 2-ounce piece aged provolone, shaved with a vegetable peeler
