1 cup whole wheat flour
3 tablespoons brown sugar
1 teaspoon baking powder

2 cups buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract
1 ripe medium banana, finely chopped

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk eggs, buttermilk, oil and vanilla until blended. Add to dry ingredients, stirring just until moistened. 2 very ripe bananas

250ml whole milk
butter, for frying
