FILETE DE CULICHI (TILAPIA W MUSHROOMS IN POBLANO CREAM SAUCE)

Filete De Culichi (Tilapia W Mushrooms in Poblano Cream Sauce) image

This is a my take on a special dish that our favorite Mexican restaurant in our town - 3 Margaritas - makes for my husband and me. It is not on the menu, but since we love fish they made this for us once and now we get it often, as do our friends. We expect this to be on the menu someday soon. It is tender Tilapia sautéed with garlic butter, topped with mushrooms and smothered in a special Poblano Cream sauce and it is YUMMY! You could replace the tilapia with anything - another kind of fish, chicken, whatever... and it would still be great! Serve with rice and beans on the side and fresh flour tortillas for dipping!

CORN AND CHEESE-STUFFED CREPES WITH POBLANO CREAM

Corn and Cheese-Stuffed Crepes with Poblano Cream image

Provided by Marcela Valladolid

Time 37m

Yield 8 to 10 crepes

Number Of Ingredients 15

Butter for greasing the baking dish
3/4 cup whole milk
2 large eggs
1 large egg yolk
1/2 cup all purpose flour
3 tablespoons melted unsalted butter, slightly cooled
1/2 teaspoon salt
2 tablespoons (1/4 stick) unsalted butter
3/4 cup chopped onion
2 poblano chiles, charred, peeled, diced
1 cup heavy whipping cream
2 1/2 cups finely grated mozzarella cheese
1 cup fresh corn kernels (from 1 ear of corn)
1/2 cup Mexican crema or sour cream
Chopped fresh cilantro, for garnish

Steps:

  • Grease a 13-by-9-by-2-inch glass baking dish with butter. Set aside.
  • For the crepe batter: Place all ingredients in a blender and process until smooth. Let the batter stand for 30 minutes to allow any bubbles to settle.
  • Preheat oven to 350 degrees F.
  • For the sauce: Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add the onions and cook until translucent, about 4 minutes. Add the poblano chiles and cook for 1 minute to blend flavors. Add the heavy cream and bring to a boil. Reduce the heat to medium and simmer until reduced and the cream coats back of spoon, about 6 minutes. Cool mixture slightly then transfer to blender and process until smooth. Season the poblano sauce with salt and pepper, to taste. Return the sauce to the same skillet and keep warm over low heat until ready to serve.
  • Heat a 10-inch-diameter non-stick skillet over medium-high heat. Brush the pan with oil (or spray with non-stick cooking spray). Add scant 1/4 cupful batter to the skillet; tilt to coat the bottom of the pan with an even layer of batter. Cook for about 30 to 45 seconds until golden on the bottom, adjusting the heat, as necessary, to prevent burning, Using a spatula, turn the crepe over and cook for 30 seconds. Transfer to a plate. Repeat with the remaining batter.
  • Stuff each crepe with 1/4 cup of grated cheese and transfer to the prepared backing dish, fitting them snugly into dish. Cove the pan with foil and bake until cheese melts, about 15 minutes.
  • To serve: Arrange the crepes on a platter and pout the sauce on top. Garnish with corn kernels, Mexican crema and chopped cilantro.

CRABMEAT STUFFED TILAPIA

Crabmeat Stuffed Tilapia image

This recipe came from www.tilapia.ws that turned out wonderfully. It is a rich and spicy recipe that can be used on other similar fish as well. It was difficult to roll the fillets easily, so I placed one fillet on the bottom of the casserole dish, layered the crabmeat on it and topped with another fillet of Tilapia. Larger fillets would work out better for rolling. Also one can adjust the amount of cayenne as desired. Worked out great.

Time 40m

Yield 2-4 serving(s)

Number Of Ingredients 11

1 small onion
1 celery rib
4 tablespoons unsalted butter
1/4 cup fresh parsley
1/2 cup breadcrumbs, unseasoned
8 ounces white crab meat, Phillips Pasteurized Crab meat
1 tablespoon lemon juice
1/8 tablespoon cayenne pepper
4 (6 ounce) tilapia fillets, approximately 6 oz each
2 tablespoons butter, Melted
paprika

Steps:

  • Preheat oven to 400°F.
  • chop the onion and celery into fine pieces.
  • flake the crabmeat and check for pieces of shells.
  • Sauté onion and celery in butter until tender.
  • add parsley and remove from heat.
  • stir in the bread crumbs, crab meat, lemon juice and cayenne pepper.
  • Spray casserole or oven pan with cooking spray.
  • Spread the mixture over the tilapia fillets and roll them up placing seam side down in dish. Place any leftover stuffing around fillets.
  • Sprinkle with melted butter and paprika.
  • Place in a 400°F oven for about 20 to 25 minutes until the tilapia flakes easily with a fork.

Tips:

  • To ensure the tilapia is cooked evenly, make sure the fillets are of uniform thickness. If necessary, use a sharp knife to carefully slice the fillets to an even thickness.
  • For the best flavor, use fresh poblano peppers. If you can't find fresh poblanos, you can substitute canned or frozen poblanos, but be sure to drain and rinse them before using.
  • To make the cream sauce extra smooth, blend it in a blender or food processor until completely smooth. You can also use an immersion blender to blend the sauce directly in the pan.
  • If you don't have heavy cream on hand, you can substitute milk or half-and-half.
  • To prevent the tilapia from sticking to the pan, make sure the pan is hot before adding the fish. You can also spray the pan with cooking spray or brush it with a little oil.
  • Serve the stuffed tilapia with your favorite sides, such as rice, beans, or vegetables.

Conclusion:

This stuffed tilapia with poblano cream sauce is a flavorful and satisfying dish that is sure to impress your family and friends. The tilapia is flaky and tender, the poblano cream sauce is rich and creamy, and the combination of flavors is simply divine. This dish is also relatively easy to make, so it's perfect for a weeknight meal. So next time you're looking for a new and exciting way to cook tilapia, give this recipe a try.
