5 tablespoons extra-virgin olive oil, divided
1 large shallot, finely chopped
12 button mushrooms, thinly sliced
8 tablespoons butter, divided
1 tablespoon all-purpose flour
1/2 cup dry white wine
1/2 cup chicken stock
1 cup cream
Freshly grated nutmeg, to taste
Salt and freshly ground black pepper
1 or 2 dashes hot sauce
8 slices prosciutto
1 clove garlic, grated
2 fresh thyme sprigs, leaves chopped
3 to 4 fresh basil leaves, chopped
1 baguette, split and halved
20 large sea scallops, trimmed of any connective tissue and patted dry
1 cup plain bread crumbs
1 clove garlic, cracked from skin
Handful parsley leaves, chopped
1 pound triple washed spinach, stems removed

Steps:

  • Place oven rack at center of oven and preheat broiler.
  • Heat 2 tablespoons extra-virgin olive oil in a small pot over medium heat and add the shallots and mushrooms, cook 5 minutes. Add 2 tablespoons butter and flour to softened shallots and mushrooms and cook 1 minute then whisk in wine, reduce 30 seconds, add stock and bring to a bubble. Stir in cream and heat through. Season sauce with nutmeg, salt and pepper and a couple dashes hot sauce, then reduce heat to low.
  • While the sauce is working, cover cookie sheet with foil and place prosciutto on the sheet and crisp up 2 minutes on each side under the broiler. It will continue to crisp as it cools.
  • In a small bowl, combine the remaining 6 tablespoons butter, garlic, thyme and basil. Spread over baguette and place under broiler until toasty. Switch oven to 400 degrees F.
  • Heat a skillet or cast iron pan over high heat. Season the scallops with salt and pepper and dress with 1 tablespoon extra-virgin olive oil. Sear the scallops to caramelize 1 to 1 1/2 minutes on each side then cover them with sauce, bread crumbs and parsley and finish in oven about 6 to 7 minutes until brown and bubbly.
  • While scallops cook, heat remaining 2 tablespoons extra-virgin olive oil over medium heat with crushed garlic, cook 1 minute and remove. Add spinach and wilt into skillet. Season greens with salt and pepper.
  • Serve scallops with wilted spinach alongside and top with broken pieces of crispy prosciutto and toasted bread.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

1 (10 ounce) package frozen chopped spinach
3 tablespoons extra virgin olive oil, EVOO (Divided)
3 garlic cloves, Chopped
1/2 small onion, Chopped
1/2 small red bell pepper (1/4 chopped & 1/4 cut into strips, for garnish)
2 ounces prosciutto, cut into ribbons
coarse salt
black pepper
1/4 cup Italian seasoned breadcrumbs
1/3 cup grated parmigiano-reggiano cheese
2 lbs beef eye round

Steps:

  • Defrost spinach in microwave. Wrap in clean kitchen towel and wring chopped spinach dry.
  • Place a large skillet on the stove over medium high heat. Add 2 tablespoons EVOO to hot skillet. Add garlic to oil. Add onion and red pepper, cook 1 minute. Lower heat to medium. Add the prosciutto and the spinach. Season with salt and pepper. Add bread crumbs and cheese to spinach. Turn off heat. Let stuffing cool.
  • To create the cavity for the stuffing, use a long sharp knife (like a boning knife), and cut a 1 to 2-inch hole through the center of the roast making a lengthwise slit. Turn the meat around and cut another slit in the same spot so that your knife completes the cavity. Insert a wooden spoon into the cavity to make sure the hole is even and goes all the way through.
  • Put the cooled filling in a re-sealable plastic bag and snip a hole in the corner of the bag. Pipe the filling into the cavity. You may need to push it along with your fingers to make sure that it goes all the way through.
  • Pre-heat nonstick skillet over high heat. Cut the roast into 6 even slices, being careful to keep the stuffing in each slice. Add 2 tablespoons of EVOO to the pan. Season the steaks with salt and pepper and sear in hot, nonstick skillet, 2 minutes on first side. Flip the steaks and sear for an additional 2 minutes then lower the heat to medium-high and cook until done (about 3-4 more minutes). Garnish with thinly sliced red pepper.

Tips:

  • To ensure even cooking, use a meat mallet to pound the steak to a uniform thickness before stuffing and rolling.
  • To prevent the filling from spilling out during cooking, secure the rolled steak with toothpicks or kitchen twine.
  • For a crispy outer layer, sear the steak in a hot skillet before transferring it to the oven to finish cooking.
  • If you prefer a more tender steak, braise it in a covered baking dish with a small amount of liquid, such as broth or wine.
  • To add extra flavor, stuff the steak with a variety of fillings, such as mushrooms, cheese, or sun-dried tomatoes.

Conclusion:

Stuffed steak is a versatile and delicious dish that can be prepared in a variety of ways. Whether you prefer a quick and easy skillet meal or a more elaborate oven-roasted dish, there's a stuffed steak recipe to suit your taste. With its tender meat, flavorful filling, and crispy outer layer, stuffed steak is sure to be a hit at your next dinner party or family gathering.
