3/4 lb ground beef
1/2 lb ground pork
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons beef bouillon granules
1 teaspoon salt
1/4 teaspoon pepper
1 cup cooked rice
1/2 cup jarred old el paso cheese and salsa dip
1/2 cup sour cream
1 cup diced tomato
1/2 cup chopped green onion
1 tablespoon soy sauce
1 cup hot water

Steps:

  • Cut the peppers in half lengthwise, leaving the stems and halving them also.
  • Remove the seeds and ribs.
  • Saute the beef and pork, the onion, garlic, 1 teaspoon of the bouillon granules, and the salt together, crumbling well, until the onion is transparent.
  • Drain off the fat.
  • Add the rice, cheese, sour cream, tomatoes, green onions and soy sauce.
  • Mix well.

1/2 cup long-grain rice (preferably brown)
1 teaspoon salt
4 large sweet peppers (preferably red)
3 tablespoons butter or 3 tablespoons margarine
1 medium onion, chopped
1/2 cup celery, finely diced
1/2 cup sunflower seeds
1/4 cup parsley, minced
2 eggs, slightly beaten (or equivalent egg substitute)
1/4 teaspoon dried oregano leaves, crumbled
1 jalapeno pepper, chopped
1 teaspoon black pepper
1/2 cup sharp cheddar cheese, shredded

Steps:

  • Cook rice in 1-1/2 cups boiling salted water for 35 minutes or until tender.
  • Drain if necessary.
  • Set aside. Cut peppers in half.
  • Remove seeds and white membrane. Parboil peppers in boiling salted water for 5 minutes.
  • Arrange in slightly oiled, shallow 1-1/2 quart baking dish.

3 medium sweet red peppers
1 cup fresh mozzarella cheese, cut into small cubes

5 tablespoons extra virgin olive oil
3 onions, finely chopped
3/4 cup long-grain white rice
1/4 cup pine nuts
2 tablespoons raisins
2 small tomatoes, chopped
1 -2 tablespoon of fresh mint or 2 teaspoons dried mint
1/4 teaspoon ground allspice
1/2 teaspoon sugar
1/2 teaspoon lemon juice
salt and pepper
2 3/4 cups vegetable broth
6 -7 small red peppers (total weight about 1-1 1/3 kg.)

Steps:

  • Heat 3 T olive oil in a saute pan, add onions and saute over medium heat for 10 minutes. Add rice and pine nuts and stir 5 minutes over low heat. Add currants, tomatoes, mint, allspice, sugar, lemon juice, salt and pepper; cook 2 minutes.
  • Add 1 1/4 cups broth and bring to a boil. Cover and cook over low heat for 12 minutes or until liquid is absorbed.
  • Taste and adjust seasoning; rice will be only partially cooked.

8 oz Italian sausage, casings removed
15 oz corn, canned or frozen
1 egg
2 Tbs milk
1 ts salt

1-cup beef broth
4 slices bacon

Steps:

  • Preheat oven to 350°F. Rinse the bell peppers. Cut off the tops and save; remove and discard the seeds. Butter the inside of the bell peppers and stand them upright in a baking dish just large enough to accommodate them. Heat the oil in a large skillet, adding onions and the top of the peppers finely chopped. Cook for about 5 minutes on medium heat and then add the sausage. After the sausage is cooked, turn off the heat and drain the fat from the skillet. At this point add the corn, mix well and stuff the peppers. In a small bowl whisk egg with milk seasoning them with salt, pepper and paprika. Divide in 4 equal amounts and pour into each pepper. Pour the beef broth into baking dish and place the dish in the oven; bake for 45 minutes. Few minutes before done, crisp the bacon in a pan or microwave. 4 red bell peppers, tops and seeds removed
1 teaspoon olive oil
¼ onion, chopped
2 cloves garlic, chopped
1 (15 ounce) can black-eyed peas, rinsed and drained
2 large Swiss chard leaves, chopped
salt and black pepper to taste

Steps:

  • Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
