STUFFED GREEN PEPPER CASSEROLE

Stuffed Green Pepper Casserole image

This was a great way to use up leftover rice. I found this recipe as an alternative to stuffed peppers, but much faster. This is tasty and fast to make with ingredients you have on hand. Recipe courtesy of All You May 2013 and Whitney Coy of Lancaster, Ohio.

Categories     Low Cholesterol

Time 55m

Yield 8 serving(s)

Number Of Ingredients 12

1 lb sweet sausage (casings removed) or 1 lb hot Italian sausage (casings removed)
1 tablespoon olive oil
2 large green bell peppers, seeded and chopped
1 medium onion, chopped
29 ounces tomatoes (with juice)
45 ounces tomato sauce
30 ounces corn, drained
1/4 teaspoon garlic powder (I used fresh garlic)
1 teaspoon salt
1/4 teaspoon pepper
3 cups white rice, cooked
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350. Line a rimmed baking sheet with foil. (I skipped this step and found I didn't need to worry about anything spilling anywhere by using a larger pan).
  • In a large skillet over medium heat, cook sausage, stirring to break up chunks, until browned, 4 or 5 minutes. Put in bowl and wipe out skillet.
  • Warm oil in skillet over medium heat. Add bell peppers and onion and cook, stirring, until peppers are just tender.
  • Stir in sausage, tomatoes, tomato sauce, corn, garlic powder, salt, and pepper.
  • Turn heat to high and bring to a boil, stirring occasionally.
  • Reduce heat to medium-low and simmer 10 minutes, stirring once. Add rice.
  • Pour mixture into a 9x13inch baking dish and place on baking sheet. (I found by putting the entire mixture into an 11x14" pan there was enough room, and I didn't need to dirty another dish or waste foil).
  • Bake until bubbly, about 30 minutes.
  • Remove from oven and sprinkle with cheddar.
  • Return to oven and bake until cheese melts, about 3 to 5 minutes longer.
  • Let stand 5 minutes before serving.

STUFFED GREEN PEPPER CASSEROLE

Stuffed Green Pepper Casserole image

It has all the basic ingredients for a yummy one dish meal the whole family will love! I think it can be customized such as serve all meat and vegetable ingredients over the rice instead of mixed with it. Use hashbrowns or diced potatoes in place of the rice or add additional vegetables if you desire. It's so versatile!

Picture this... Christmas season is upon you, you bought ground beef, ground pork, and green peppers to make stuffed Peppers. It is three days later and you still haven't had the time to make them. So to keep from losing all the ingredients, you decide to do the next best thing and make a casserole. Not enough time. Hello...

Provided by Pam Ellingson

Categories     Casseroles

Time 30m

Number Of Ingredients 14

3/4 lb lean ground chuck
3/4 lb lean ground pork (or can use italian sausage, remove casings)
3 medium green bell peppers, seeded and chopped into 1" chunks
1/2 large onion, chopped into 3/4" pieces
1 can(s) diced tomatoes, roasted garlic flavored
1 can(s) diced tomatoes, italian style
2 Tbsp tomato paste
1 Tbsp worcestershire sauce
1/4 tsp garlic powder or to taste
1/2 tsp ground cumin or to taste
1 pkg uncle ben's chicken flavored ready rice (or two cups of cooked rice)
seasoning salt and pepper to taste
1 to 2 tsp lemon juice, fresh (optional)
shredded mozzarella cheese (optional but very good)

Steps:

  • 1. Wash and chop peppers and onion, and place into a Ziplock, Zip and Steam microwave steamer bag. (or into a microwave safe bowl with 2 tsp water covered with plastic wrap) and steam on HIGH power for 3 to 4 minutes. Remove from microwave and allow to sit to finish steaming.
  • 2. In a very large microwave safe mixing bow, divide both meats into bite size pieces, microwave on high for 3 minutes, stir to break up clumps and continue to microwave in 2 minute intervals, breaking up clumps if they form, until completely cooked.(This took me about 10minutes total) Remove bowl and pour off any extra fat that accumulated.
  • 3. Add steamed veggies, and all other ingredients except rice, lemon juice and mozzarella (if using). Stir together well, making sure the tomato paste is well distributed. Add rice and stir. Taste and adjust salt, pepper and seasonings. Add lemon juice if desired to brighten the taste. Heat to desired temperature in microwave if needed.
  • 4. May be served immediately or you may pour into a lagre baking dish, sprinkle with mozzarella and either heat in microwave to melt cheese or pop under broiler to melt and brown the cheese.

CANDI'S STUFFED PEPPER CROCK POT CASSEROLE

Candi's Stuffed Pepper Crock Pot Casserole image

My boyfriend's mom made a variation of this recipe in the oven, but it was missing something... I added some sausage and some Frank's Red Hot and that was just the ticket to add some kick to the recipe! Preparing it in the Crock Pot slowly, allowed the peppers to cook fully, and really allowed all the flavors to soak into one another. (Also allows those of us who work outside the home, to prepare the meal ahead of time and cook it all day on warm!)

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 15

1/4 teaspoon garlic powder
1/4 teaspoon Lawry's Seasoned Salt
1/8 teaspoon pepper
1 1/2 cups Minute Rice
1 1/2 cups water
10 1/2 ounces tomato soup
8 ounces tomato sauce
1 1/2 tablespoons Frank's red hot sauce
1/4 teaspoon italian seasoning
4 ounces Velveeta cheese (optional)

Steps:

  • Saute onions in extra virgin olive oil.
  • Brown sausage and ground beef with sauteed onions, and add garlic powder, seasoned salt, and pepper to browning meat.
  • Chop up 4 green bell peppers. Make chunks approximately 1/2 inch to 3/4 inch.

I just made this recipe tonight for supper and thought I'd share it.It is from the Spring 2010 edition of Kraft's What's Cooking magazine. I used a combination of red, yellow and orange bell peppers that I had frozen.Corn would also be a good addition. The recipe calls for Kraft's 4 Cheese Italiano but I used a combination of cheddar, mozza and fresh parmesan.I also added a tsp of onion flakes. You can also substitute the white rice for brown. It is a very fast tasty meal with leftovers for tomorrow.
