DEEP-FRIED STUFFED JALAPENOS

Deep-Fried Stuffed Jalapenos image

Provided by Food Network

Number Of Ingredients 10

24 large pickled jalapenos chiles
1/4 refried beans
1/4 cup chunky peanut butter
4 ounces Monterey Jack cheese, cut into 8 (1/4 by 1-inch strips)
1/2 cup yellow cornmeal
1/2 cup unbleached all-purpose flour
1/2 teaspoon salt
2 eggs
Corn oil, for deep-frying
8 ounces sour cream, whisked until smooth and shiny, for dipping

Steps:

  • Cut a short slit in the side of each jalapeno. Carefully scrape out as many seeds as possible, but avoid tearing or enlarging the slit. Stuff each of 8 jalapenos with about 1 teaspoon of refried beans. Stuff 8 more jalapenos with about 1 teaspoon peanut butter each. (The capacity of individual chiles will vary, but they should not be so full that the slits gape open.) Insert 1 strip of cheese into each of the 8 remaining chiles. On a plate, mix together the cornmeal, flour, and salt. In a small bowl, thoroughly whisk the eggs. One at a time, dip the jalapenos into the beaten egg and then roll them in the cornmeal mixture until well coated. Let the jalapenos stand on a rack for 30 minutes to firm the coating. In a deep fryer or in a wide, deep pan fitted with a deep-fry thermometer, heat about 4 inches of corn oil (the fryer or pan should be no more than half full) to 375 degrees. Working in batches and using a slotted spoon, lower the jalapenos into the hot oil. Fry, turning the chiles gently, until they are just crisp and golden, about 4 minutes. (Overcooking the chiles may cause the fillings to boil away.) With the slotted spoon, transfer the fried jalapenos to absorbent paper. Keep the chiles warm in a 250 degree oven until all have been fried. Serve them hot or warm, accompanied by sour cream for dipping.

STUFFED JALAPENOS

Stuffed Jalapenos image

If you love jalapenos, a Chili Grill is the perfect gadget for you. There are so many fillings you can use for stuffing these wonderful little peppers. This cornbread filling is one of my favorites. These are totally addicting.

Provided by luvmybge

Categories     Peppers

Time 1h

Yield 24 jalapenos

Number Of Ingredients 5

1 (8 1/2 ounce) box cornbread mix
1/2 cup shredded cheese (your favorite, I use cheddar)
1/2 teaspoon liquid smoke
salt or creole seasoning, for sprinkling in peppers
24 large jalapenos, tops cut off and seeds and membrane removed

Steps:

  • Preheat grill to medium.
  • Wash jalapeños and cut off tops.
  • Using end of vegetable peeler, scrape out seeds and membrane (NOTE: wear plastic gloves to protect hands if you are sensitive to hot peppers).
  • Poke a hole in the bottom of each pepper (so it can release moisture during cooking and so it won't force the cornbread filling to boil out of the top).
  • Season inside of each pepper with a little salt or creole seasoning.
  • Make cornbread mix according to directions on box adding cheese and liquid smoke.
  • Fill peppers to within 1/4-inch to top of pepper leaving that space for cornbread to bake and rise.
  • I use a pastry bag or a Zip style bag with the end cut off to fill the peppers.
  • If your peppers are small they will shrink more as they cook so stick a toothpick through the tops of them to keep them from falling through the Chili Grill® holes.
  • Place them all in the Chili Grill® holder and place on preheated grill (med heat).
  • Close grill cover and let them cook for about 30 minutes checking them halfway through.
  • (You might have to adjust the heat to low if they are browning too quickly).
  • Peppers will look shriveled and cornbread will pop up over top of peppers when done.
  • Enjoy!

STUFFED JALAPEñO PEPPERS

Stuffed Jalapeño Peppers image

Make and share this Stuffed Jalapeño Peppers recipe from Food.com.

Provided by El Bistro

Categories     Lunch/Snacks

Time 1h10m

Yield 10 Jalapeños, 3 serving(s)

Number Of Ingredients 5

10 large jalapeno peppers, with stems
1 (8 ounce) package Philadelphia Cream Cheese
3/4 cup shredded cheddar cheese
1 ounce hidden valley ranch dressing mix
1 (12 ounce) package bacon

Steps:

  • cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
  • Preheat oven to 375 degrees.
  • Soften the cream cheese in the microwave for about 20 seconds.
  • Place the cream cheese in a bowl.
  • Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
  • Fill the jalapenos with the creame/ranch/cheese mixture.
  • Trim any excess fat from the bacon, preferably with kitchen scissors.
  • Wrap all of the peppers with the bacon.
  • Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
  • Enjoy the best stuffed jalapeños you have ever had.

Tips:

  • Choose the right peppers. Look for firm, deep green, and unblemished peppers. If you prefer less heat, choose smaller peppers. For more heat, choose larger peppers.
  • Cut the peppers carefully. Use a sharp knife to make a lengthwise slit in each pepper, making sure not to cut all the way through. Remove the seeds and ribs, taking care not to tear the pepper.
  • Prepare the filling. There are many different ways to make stuffed jalapeños, but some common ingredients include cheese, cream cheese, meat, and vegetables. You can also add spices, herbs, and seasonings to taste.
  • Stuff the peppers. Use a spoon or your fingers to stuff the peppers with the filling. Be careful not to overstuff them, as this can make them difficult to close.
  • Secure the peppers. Once the peppers are stuffed, secure them with toothpicks or skewers. This will help to keep the filling inside the peppers while they are cooking.
  • Cook the peppers. Stuffed jalapeños can be cooked in a variety of ways, including baking, frying, and grilling. The cooking time will vary depending on the method you choose.
  • Serve the peppers. Once the peppers are cooked, they can be served as an appetizer, side dish, or main course. They can also be used as a topping for tacos, nachos, and other dishes.

Conclusion:

Stuffed jalapeños are a delicious and versatile dish that can be enjoyed in many different ways. With a little creativity, you can create your own unique stuffed jalapeño recipe that will impress your friends and family. So next time you are looking for a fun and easy appetizer or side dish, give stuffed jalapeños a try!
