1 package (8 ounces) cream cheese, softened
3 cups finely shredded cheddar cheese

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. 1 (8 ounce) package cream cheese
1 lb bacon

Steps:

  • Wash Jalapenos then cut off top.
  • Cut the Jalapenos length wise in half and take out seeds until hollow.
  • Take room temp cream cheese and fill the Jalapenos.
  • Cut Bacon in half.
  • Wrap bacon around Jalapenos.
  • Lay bacon wrapped Jalapenos on sprayed baking sheet.
  • Bake for 45 minutes on 375.
  • Drain on paper towel and ENJOY!
  • Note: Make sure when wrapping the bacon around that you end with bacon on bottom, if not they will unwrap.

30 jalapeno peppers (or Anaheim peppers)
2 (16 ounce) packages bacon
16 ounces cream cheese, softened
2 cups sun-dried tomatoes, chopped (out of a jar is fine, they don't have to be fresh)
1 tablespoon garlic powder

Steps:

  • Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
  • In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
  • Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
  • Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.

1 (4.25 ounce) can chicken spread

2/3 cup black beans, drained and rinsed
1/2 cup frozen corn, thawed

8 slices bacon, cut in half (optional)

Steps:

  • Preheat oven to 425 degrees.
  • She says line a rimmed baking sheet with parchment paper. But I would set them on a baking rack in the rimmed baking sheet to get them out of the grease although they are harder to get out that way.

1/2 cup cilantro, chopped

  • Trim and discard stem ends of 8 jalapeño chiles (always wear rubber gloves when handling hot chiles). Scrape seeds and veins out of each chile with a thin-bladed knife.

10 jalapeno peppers (small size)
1/2 cup shredded cheddar cheese
1/4 cup light cream cheese, softened
1/4 cup salsa
3/4 cup fresh breadcrumb
2 tablespoons chopped fresh parsley
2 tablespoons melted butter
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Cut Jalapenos in half lengthwise .
  • Scrape out all of the seeds and veins and discard . (This is the HOT part of the pepper).
  • In a medium bowl, blend cheeses,salsa and 1/4 cup breadcrumbs with a fork.
  • Fill Jalapenos evenly . Place on a baking dish.
  • In a small bowl, blend remaining 1/2 cup breadcrumbs, parsley and butter.
  • Distribute evenly over filled peppers.
  • Sprinkle with salt
  • Bake until golden and crisp - about 20 minutes.

I grow peppers in the garden and always have way to many, so these little guys are a excellent finger food.

20 shrimp, peeled
2 slices bacon
1/4 teaspoon seasoning salt
12 large jalapenos
1/2 cup cream cheese
20 toothpicks

Steps:

  • Cut the tops off and remove the seeds of the jalapenos. Salt the peppers on the inside. Put the shrimp in head first, cram in some cream cheese in the opening around the shrimp.
  • Cut the bacon strips in quarters, place each quarter over the top of the jalapenos and put a toothpick through it to hold the bacon in place.Preheat oven to 375 or your barbecue and cook 1 hour until bacon is done.I have what they call a Chile Grill. You stick the peppers down in the hole of the Chile Grill and the filling will not run out of the pepper.
  • You can stuff these with anything from sausage,oysters,crab even groun beef.
