Categories     Quick & Easy

Yield 6 servings

Number Of Ingredients 8

4 medium zucchini
4 ears corn, husks removed
2 tablespoons unsalted butter
2 tablespoons chopped fresh cilantro leaves
1 tablespoon chopped fresh mint leaves
1 clove garlic, minced
Salt and freshly ground black pepper
2 to 3 ounces grated Parmesan

Steps:

  • Preheat the grill to medium. Slice the zucchini lengthwise, scoop out seeds and pulp and discard. Grill the corn until charred, then remove them from the grill and cut the kernels off the cobs. In a medium bowl add the corn and the butter and toss to coat. Add the herbs and garlic and season with salt and pepper, to taste. Stir in 1 to 2 ounces of the grated Parmesan. Stuff the zucchini with the corn mixture and grill over medium heat until warm. Sprinkle with the remaining Parmesan and serve when the cheese melts.

Tips:

  • Choose the right zucchini: Select medium-sized zucchini that are firm and have smooth, unblemished skin. Avoid zucchini that are too large, as they tend to be seedy and less flavorful.
  • Prepare the zucchini properly: Before stuffing and grilling the zucchini, slice them lengthwise and scoop out the seeds. This will help the zucchini cook evenly and prevent them from becoming too watery.
  • Use a flavorful stuffing: The stuffing is what will give your grilled zucchini its flavor, so make sure to use a combination of ingredients that you enjoy. Some popular options include seasoned ground beef, sausage, rice, vegetables, and cheese.
  • Grill the zucchini properly: Preheat your grill to medium-high heat and brush the zucchini with olive oil. Grill the zucchini for 5-7 minutes per side, or until they are tender and slightly charred.
  • Serve the zucchini immediately: Grilled zucchini is best served hot off the grill. You can garnish them with fresh herbs, grated cheese, or a squeeze of lemon juice.

Conclusion:

Stuffed grilled zucchini is a delicious and versatile dish that can be enjoyed as a main course or a side dish. It is a great way to use up summer zucchini and is a healthy and flavorful option for any meal. With a little planning and preparation, you can easily make this dish at home and enjoy the delicious taste of grilled zucchini.
