Time 35m

Number Of Ingredients 13

2 large eggplants (about 1 pound each)
2 tablespoons extra-virgin olive oil, divided
1 medium red onion, finely chopped
1 tablespoon tomato paste
½ teaspoon ground cumin
2 cloves garlic, minced
1 cup canned no-salt-added diced tomatoes
1 medium red bell pepper
½ cup chopped fresh flat-leaf parsley
⅓ cup pitted Kalamata olives, quartered
1 tablespoon red-wine vinegar
¾ cup crumbled feta cheese
Chopped fresh dill and oregano, for garnish

Steps:

  • Position rack in upper third of oven; preheat to 400 degrees F. Line a rimmed baking sheet with foil.
  • Cut each eggplant in half lengthwise. Using a spoon, scoop out flesh from the halves, leaving about 1/2-inch border on the sides and bottoms. Coarsely chop the flesh and set aside.
  • Drizzle the insides of the eggplant shells evenly with 1 tablespoon oil. Place the shells, cut-side up, on the prepared baking sheet and roast until tender, 20 to 25 minutes. Remove from oven and increase oven temperature to broil.
  • While the eggplant roasts, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add onion; cook, stirring often, until softened, 3 to 4 minutes. Add tomato paste, cumin, and garlic; cook, stirring constantly, until fragrant, about 1 minute. Add tomatoes, bell pepper and the reserved chopped eggplant; cook, stirring occasionally, until the eggplant is tender, 8 to 10 minutes. Remove from heat; stir in parsley, olives and vinegar.
  • Divide the filling evenly among the eggplant shells; top each with 3 tablespoons feta. Broil until the cheese is melted and golden, 6 to 8 minutes. Sprinkle with fresh oregano and dill, if desired.

MOM'S STUFFED EGGPLANT

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

1 large eggplant
3 tablespoons extra-virgin olive oil, divided
1/2 pound ground beef
Salt and freshly ground black pepper
1 onion, small diced
1 red pepper, small diced
3 cloves garlic, minced
1/2 cup freshly chopped parsley leaves
1/2 cup freshly chopped basil leaves, chopped
1 1/4 cup grated Pecorino Romano, divided
1/4 cup bread crumbs
1 egg
2 chopped tomatoes

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the eggplant in half and scoop out the center, leaving enough meat inside the skin so that it holds its shape when baked. Boil the scooped-out center part until very soft, about 10 to 12 minutes.
  • Meanwhile, in a medium saute pan heat 1 tablespoon olive oil over medium heat. Season the beef with salt and pepper. Add the seasoned ground beef to the pan and saute until all of its liquid is evaporated and the beef begins to brown slightly. Drain the beef, removing the extra, unnecessary fat. Let cool briefly and chop the cooked beef so that there are no large chunks of meat. In another medium saute pan over medium heat add the remaining 2 tablespoons olive oil and saute the onions, peppers and garlic together.
  • In a bowl mix together the cooked eggplant, vegetables, cooked beef, herbs, 1 cup of the cheese, bread crumbs, and the egg.
  • Fill the scooped-out eggplant halves with this mixture, dividing it evenly among the 2 halves.
  • Top with chopped tomatoes and the remaining 1/4 cup of grated cheese, season with salt and pepper, place on an oiled oven tray or baking dish, and bake for 50 minutes in preheated oven. Let cool briefly, slice widthwise and serve.

Even if you don't can your own tomato sauce, you can make Maria D Ugos stuffed eggplant; simply use fresh tomatoes or canned San Marzano tomatoes.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Number Of Ingredients 12

4 small Italian eggplants (about 1 pound)
2 teaspoons coarse salt
2 quarts water
1 tablespoon plus 1 teaspoon olive oil
2 garlic cloves, minced
2 pints Canned Tomato a Pezzetti or canned chunky tomatoes
1 small red bell pepper, seeds and ribs removed, cut into 1/4-inch dice
1/4 cup fresh flat-leaf parsley, chopped
1 tablespoon chopped fresh oregano
1 large egg, lightly beaten
3/4 cup fresh mozzarella cheese, grated
1/2 cup fresh breadcrumbs

Steps:

  • Preheat oven to 350 degrees. Cut eggplants in half lengthwise, and use a melon baller or small spoon to scoop out flesh, leaving a 1/4-inch border around the edges. Place flesh in a sieve set over a medium bowl, and toss with 1 teaspoon salt; let sit 20 minutes to drain excess moisture. Coarsely chop until pieces are about the size of peas. Meanwhile, bring the water to a boil in a large saucepan, and add the eggplant shells. Cook 2 minutes; transfer to drain on a baking sheet, cut side down, and let cool slightly.
  • In a medium skillet, heat 1 tablespoon olive oil over medium heat. Add half the garlic, the chopped eggplant, and remaining teaspoon salt; saute, stirring occasionally, 3 to 4 minutes. Add 2 cups tomatoes; increase heat to medium-high, and continue cooking until the tomatoes stop releasing juices, about 3 minutes more. Add half the red pepper and the parsley and oregano. Transfer to a medium bowl; add egg, cheese, and 6 tablespoons breadcrumbs. Stir well to combine.
  • In an 8-by-11 1/2-inch baking dish, mix remaining 2 cups tomatoes with remaining garlic and red pepper. Scoop heaping amounts of filling into eggplant shells, and arrange on top of tomato mixture in baking dish. Mix remaining 2 tablespoons breadcrumbs and teaspoon olive oil; sprinkle over eggplant filling. Bake until the tops begin to brown, about 1 hour. Remove from oven, and serve hot.

Tips:

  • Choose the right eggplant: Look for eggplants that are firm and heavy for their size, with smooth, shiny skin. Avoid eggplants with blemishes or wrinkles.
  • Roast the eggplant properly: Roasting the eggplant is the key to getting a smoky, flavorful dip. Make sure to prick the eggplant all over with a fork before roasting, and roast it until the skin is charred and the flesh is tender.
  • Let the eggplant cool completely: Before you start making the dip, let the roasted eggplant cool completely. This will help to prevent the dip from becoming watery.
  • Use a food processor or blender: A food processor or blender is the easiest way to make a smooth and creamy dip. If you don't have a food processor or blender, you can mash the eggplant by hand, but it will take a bit longer.
  • Add your favorite toppings: Once you've made the basic dip, you can add your favorite toppings. Some popular options include chopped tomatoes, onions, parsley, feta cheese, and olives.

Conclusion:

Stuffed eggplant dip is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new and exciting way to enjoy eggplant, give stuffed eggplant dip a try!
