A stunning chopped salad unites several summer standouts -- peaches, corn, cucumbers, basil -- with the sweetly acidic flavor of vine-ripened tomatoes.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 9

8 ripe medium beefsteak tomatoes
2 ripe peaches pitted and cut into 1/2-inch pieces (2 cups)
3 Kirby cucumbers, peeled, seeded, and cut into 1/2-inch pieces (1 1/3 cups)
Kernels from 2 ears corn (1 1/2 cups)
6 tablespoons extra-virgin olive oil
1 to 2 tablespoons fresh lime juice
1 1/4 teaspoons coarse salt, plus more to taste
1/4 teaspoon freshly ground pepper, plus more to taste
1/2 cup shredded fresh basil leaves, plus sprigs for garnish

Steps:

  • Slice off tops of tomatoes (about 1/2 inch). Scoop out the seeds and ribs, and coarsely chop. Stir together chopped tomatoes, peaches, cucumbers, corn, oil, 1 tablespoon lime juice, salt, and pepper. Let stand for 15 minutes. Taste and adjust for acidity, adding up to 1 tablespoon more lime juice. Stir in basil.
  • Season inside of tomato shells with salt and pepper. Fill tomatoes with tomato mixture, and garnish with basil sprigs. Serve immediately.

Tips:

  • Choose the Right Cucumbers: Select firm and evenly shaped cucumbers that are free from blemishes and bruises. Smaller cucumbers are ideal for stuffing as they cook more evenly.
  • Prepare the Cucumbers Properly: Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon or a melon baller. This creates a hollow space for the stuffing.
  • Use a Variety of Fillings: Be creative with your fillings! You can use a combination of cooked rice, ground meat, vegetables, herbs, and spices. Some popular options include:
    • Cooked rice mixed with ground beef, onions, and tomatoes
    • Quinoa and black bean salad with corn and avocado
    • Chopped vegetables like carrots, celery, and bell peppers with a tangy vinaigrette dressing
    • Creamy tuna salad with chopped celery, red onion, and mayonnaise
  • Season the Filling Generously: Don't be afraid to add plenty of herbs and spices to your filling. This will enhance the flavor and make the stuffed cucumbers even more delicious.
  • Stuff the Cucumbers Tightly: Use a spoon or your hands to pack the filling tightly into the cucumber halves. This will prevent the filling from falling out during cooking.
  • Bake or Pan-Fry the Stuffed Cucumbers: You can either bake the stuffed cucumbers in the oven or pan-fry them in a skillet. Baking is a healthier option, while pan-frying gives the cucumbers a crispy crust.
  • Serve the Stuffed Cucumbers with Sauce or Dressing: Drizzle a flavorful sauce or dressing over the stuffed cucumbers before serving. This adds extra moisture and flavor to the dish.

Conclusion:

Stuffed cucumbers are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. They are easy to make and can be customized to your liking. With so many different filling options, you can create a stuffed cucumber dish that everyone will love. So next time you're looking for a new and exciting way to prepare cucumbers, give stuffed cucumbers a try!
