3/4 cup butter, room temperature
1 cup freshly squeezed orange juice, strained
2 tablespoons sugar
1 teaspoon finely grated orange rind
1/4 cup Grand Marnier

Steps:

  • Slice butter into 1/4-inch slices.
  • In a small saucepan, heat orange juice, sugar and orange rind, on low temperature stirring often for 5 minutes.
  • Increase heat and bring to boil.
  • The mixture will thicken and become syrupy.
  • Whisk the mixture and add the butter, piece by piece.
  • When thoroughly blended, remove from heat and stir in Grand Marnier. Serve immediately.

2 teaspoons flour
1 cup milk
1/2 cup heavy cream

8 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon ginger powder
1 cup flour
oil
1/4 cup sweet butter
1 orange, zest of
1/2 cup onion, minced
2 tablespoons fresh ginger, minced
1 tablespoon lemongrass, finely minced
3 ounces Grand Marnier
1 cup fresh orange juice

Steps:

  • Heat some oil to 350?.
  • In a mixing bowl combine salt, sugar, white pepper, garlic, ginger and flour together.
  • Place the chicken breast onto a baking sheet and season with the seasoning mix.
  • Lightly coat the chicken breast and deep fry to a light golden brown. Drain onto paper towel.
  • Place the chicken breast onto the baking sheet.
  • Preheat oven to 350 degree. .
  • Heat a skillet adds butter until it starts to turn to a light brown. Add orange zest, onion, ginger and lemongrass and stir-fry until the onion is tender. Pour in the Grand Marnier Liqueur and orange juice. Reduce the sauce down by half. Pour over the chicken breast and bake for 10 minutes. Serve hot.

2 tablespoons vegan butter, such as Earth Balance
1/4 cup grade-A maple syrup
1/2 teaspoon powdered cinnamon
1/4 teaspoon ground nutmeg
2 under-ripe bananas sliced lengthwise
2 tablespoons Grand Marnier
2 scoops vegan vanilla ice cream, such as So Delicious coconut
1/2 teaspoon orange zest

  • In a 10-inch skillet over low heat melt butter, add maple syrup and stir in cinnamon and nutmeg to butter. Bring to a simmer, add bananas, allow to cook for about 1 minute on either side, spooning sauce over the bananas. Remove bananas and place in a s3erving dish. This is when I remembered a dream I had about pairing chicken and Grand Marnier (seriously I do actually dream about food). So I decided to pan fry the chicken and make a reduction for the sauce. The result was extraordinary and now I make it once every month or so. I hope you enjoy it as much as I do!

2 boneless skinless chicken breasts
1/2 an onion
4 mushrooms (I prefer cremini)
butter or margarine
1/4 cup Grand Marnier
salt and pepper (to taste)
flour
oil

Steps:

  • Slice the mushrooms and dice the onion. Then saute them in the butter or margarine.
  • Add the Grand Marnier and reduce until only a tablespoon remains.
  • Season to taste.
  • For the chicken, butterfly the breasts. Season, then dredge in flour (shaking them off after). Pan fry in oil until done.
  • Remove the breasts from the pan, spoon the reduction on, and serve.
